Ragi Puttu Recipe – Finger Millet (Kezhvaragu) Puttu Recipe – Sweet Ragi Puttu

Sweet Ragi Puttu, is a healthy steamed putt recipe made with finger millet / kezhvaragu / keppai. Millets are in general are very diabetic friendly… ragi is no exception it is also rich in calcium and very low in calorie count. There are so many puttu that we relish at home, especially the one made with red rice is my favorite and this ragi puttu taste just like that… and makes a healthy eve tiffin or perfect for breakfast. Nowadays ragi flour are easily available in every Indian grocery store and I’ve made this puttu with store brought ragi flour. I have used regular white sugar but you can make more healthy by substituting with jaggery or palm sugar. You may use a traditional puttu maker to steam or use a regualr idli cooker to steam as shown below….

 Ingredients
  Ragi flour   1 & 1/2 cup
  Salt   2 pinch
  Water   1/4 cup
  Fresh grated Coconut   1/2 cup
  Sugar   1/2 cup
  Cardamom   2 (crushed/ powdered)
  Melted Ghee   1/4 cup

Take ragi flour in a wide plate or bowl. Mix salt with water and keep aside.

Sprinkle one tsp of water at a time to the flour and mix gently. After about 10 tsp, the flour should look slightly crumbly, texture shown above.

Transfer the content to a damp clean white or muslin cloth (slightly wet / Eera thuni), loosely tie a knot and keep it ready for the steaming process.

Heat up an idli cooker with little water, place the ragi flour sack on top of the idli plate, cover and steam on medium high flame for 10 minutes.

When done, it will look lightly airy (fluffed up), the aroma of the steamed ragi is the indication that its cooked well. Transfer the content back to a bowl, gently mash up the lumps and aerate and let it rest to cool for few minutes.

Meanwhile get the rest of the stuff ready. Grate the coconut, crush the cardamom and melt the ghee.

Add freshly grated coconut, crushed cardamom and mix well.  Just before serving add sugar and ghee. Mix everything, press them through desired mold and serve. You may also serve with mashed banana.

Notes

Serves 3-4 adults approx

Do not add sugar when the flour is hot, this makes it sticky and result in too many lumps.

Steamed flour can be cooled completely and refrigerated upto 3 days. Before serving cover and microwave for few seconds, add the garnishes and serve.

    Hi Madam, does it any difference to use regular ragi flour vs ragi puttu flour? Wondering if they are same.

      I don’t think it makes any difference… store bought ragi flour is roasted to some extent to prolong shelf life….so any one of them is fine to use.Thanks Sathish, let me know how it turned out brother!

      Nancy,

      Traditionally a cloth is used to steam the flour, I've never tried in a plain pan so far. Double lined cheese cloth or even baby cloth nappy will work too. I hope thats not so hard to find. Light weight towel will work too. Hope this helps.

    Thanks for all the wonderful recepies u are sharing with us. So far all the recipes i tried from ur website has come out really good.

    I have not tried any puttu varieties so far. I dont have an idly cooker. so could you please tell me an alternative method
    to make this recipe without an idly cooker.

      Vaishnavi, does your rice cooker have a steamer basket?? Then that will be a good option to try, fill the rice cooker with little water and place the puttu maavu wrapped in cloth and place it in the basket and steam. Now… i'm not sure with the timing, so try for 10 to 15 minutes. The other possibility is to use a regular wide sauce pan filled with water, place a right fitting plate inside to hold the puttu, cover with lid. Thanks.

      Any light towel or thin cotton material would do the needful, doesn't exactly have to be muslin. Mine???? have u seen baby cloth diaper rolls , buy a big roll, wash them with light soap, or run a clear cycle in ur washer and use it. May sound gross but worth it, I meant new… unused ones..they really work well for making paneer too. All the best.

        That’s not gross. :-))) its being resourceful:-)) I never thought of that. I bought this cheesecloth they use for painting from Home depot and I used it to steam pittu and i loose a bit thru those holes since that material easily stretches. So I will try this. Thanks.

          Suja,

          Bought mine at K-mart but the problem is they come in big packs and quite expensive too. Its advisable only if you wish to use the whole bundle orelse stick to any thin towel. These cloth diapers come in different size and thickness, choose wisely, look for thin nappy cloths and don't buy those pre-fold thick ones.

      Abigail, guess we can do but slightly dry roast the flour before steaming. Texture always differ, only freshly ground flour taste good.
