| 20 nos | Indian broad beans |
| 1 no | Onion (chopped) |
| 3 nos | Tomato (ripe and juicy) |
| 1 tsp | Ginger (crushed) |
| 3 clove | Garlic (crushed) |
| ¼ tsp | Turmeric powder |
| 1 tsp | Red chili powder |
| 1 tsp | Coriander /dhania powder |
| ¼ tsp | Cumin powder |
| ¼ tsp | Garam masala (optional) |
| ½ tsp | Salt (or to taste) |
| 4 tsp | Oil |
| ¼ tsp | Mustard seeds |
| ¼ tsp | Cumin seeds |
| ¼ tsp | Split balck gram (ullundu) |
| 6 nos | Curry leaves |
| 2 stks | Coriander leaves – for garnishing |
Instructions
Trim the edges of the beans and chop them about into 1 ” pieces and wash them thoroughly. Include those fresh seeds too for the masala. Heat oil in a pan and splutter mustard, cumin seeds, split black gram and curry leaves. Add the chopped onions, crushed ginger, garlic and saute till translucent. Now add the chopped tomatoes along with the cut beans. Bring the flame to sim, cover and cook for 5 minutes. The tomato juice should cook the veggie, so do not add any water. Now open add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala and salt. Fry over medium flame for 4 to 5 minutes or until the oil separates. Garnish with coriander leaves and switch off. Serve hot with roti or as a side for rice.
Notes
This recipe is dominated by tomatoes, which makes it tangy and chunky(kind of pickle taste). If you prefer less sour then go with 1 to 2 tomatoes for the curry.
