Curried Moong Sprouts

Description

Moong sprouts seasoned with spices and cooked to perfection. Great healthy lunch box idea when rolled up in a warm chapatti or tortilla. (  Whole Green Gram – English, Paasi payaru– Tamil, Mudi Pesalu – Telugu, Sabut Moong – Hindi,  Idi Hesuru – Kannada, Cherupayar – Malayalam  )
Ingredients
2 cup Moong sprouts
2 nos Onion (chopped)
3 nos Tomato (diced)
½ tsp Ginger garlic paste
1 no Green chili (slit open)
1 tsp Red chili powder
3 tsp Coriander /dhania powder
¼ tsp Cumin powder
¼ tsp Black pepper powder
¼ tsp Turmeric powder
¾ tsp Salt (as per taste)
3 tsp Oil
1 tsp Ghee
2 nos Cinnamon stick (small)
4 nos Cloves
1 no Star anise
4 nos Black stone flower/ kalpasi
¼ tsp Cumin seeds
1 no Bay leaf
5 nos Curry leaves
3 stks Coriander leaves- for garnishing

Instructions

Follow sprouting procedure for Moong sprouts. It takes about 2 days for full fledged sprouts to shoot up, so plan ahead, if you intend to make this dish.

Heat oil and ghee in a pan, add the whole garam masalas (Bay leaf, cinnamon, cloves, cumin seeds, black stone flower, star anise) along with curry leaves and let them sizzle for a while. Fry the chopped onions and green chilies for few minutes to brown them, followed by the ginger garlic paste. Now add the tomatoes, cover and cook until soft. Now wash the sprouts gently, add it the onion tomato gravy along with turmeric powder, red chili powder, coriander powder, cumin powder and black pepper powder with a cup of water. Cover and simmer for 6 to 7 minutes over medium flame. When the gravy thickens, add salt and garnish with coriander leaves.

Notes

This approximately serves 4.

Fresh garam masala adds good flavour to the dish, so don't substitute with ground garam masala.

Black stone flower is optional.

This recipe should give you enough thick gravy, add extra 1/2 cup water in case if you need a thin consistency.

    Hi Mullai,
    Yesterday I tried this recipe with moong dal sprouts.It came out good.Thanks for the healthy recipe.

    Now i’m having salad with moong dal sprouts . planned to make sprouts every week.Wt else can i sprout? Give me some idea about lentils.Thanks.

      Kavi,

      You can do this without sprouting. Soak the whole Moong beans overnight and then cook with enough water until they turn soft but firm and then follow the above recipe.

    Hi Mullai,
    Need tips to prevent bad smell form the sprouts. Actually, whenever I tried to make moong dal sprouts, It smells bad. the smell is so offensive. I wanted to try this recipe… started it thrice and ended up in bad smelling sprout. Please give me your expert tips to fix the problem.

      CHANGE THE WATER DAILY TILL THE DHAL SPROUTS IT WILL PREVENT THE SMELL

      Just soak the bean overnight,drain all the water and just place them in a colander .Sprinkle fresh water everytime you see it going dry. You’ll see sprouts the next day. I don’t have muslin cloth and I just keep them in colander and get nice sprouts without any bad smell.Just steam them along with finely diced baby carrots,red ,yellow and green bell peppers and corn .sprinkle some salt and a little lemon juice,you’ll get a delicious salad.

      I, personally don't like the store bought ginger garlic paste, but its ok to use it if dont' have fresh ones.

    Hi Mullai.. I prepare the same dish with black eyed bean,haven't tried making with sprouts yet..Got to try..Too many recipes coming over from ur end..Hats off Mullai..It takes quiet a long time for me to post one single recipe..Anyway's shall get back to u with broccoli results first.
