| 1 cup | Soya chunks |
| 1 no | Big onion sliced lengthwise |
| 2 nos | Tomato (diced) |
| 2 cup | Basmathi rice |
| 3 nos | Green chili (slit open) |
| 1 tbsp | Red chili powder |
| 1 tbsp | Ghee |
| 3 tbsp | Oil |
| 10 nos | Cashew |
| Salt | |
| ½ cup | Mint leaves |
| ½ cup | Coriander leaves |
| 3 nos | Cloves |
| 1 no | Cinnamon stick |
| 1 no | Bay leaf |
| ½ | Lime juice |
| 4 cup | Water |
| 1½ tsp | Ginger & garlic paste |
Instructions
TO COOK SOYA CHUNKS
Boil water with some salt in a vessel,add the soya chunks and let it boil for 4-5mins.close the lid and keep it aside for few minutes.Drain the water, press to remove any excess water absorbed.
Heat ghee and oil ,add cloves,cinnamon and bay leaves.Fry them for a while add the onions&ginger garlic paste.when the onions turn color add green chilies,chopped mint and coriander leaves.saute them for few mins and then add chopped tomatoes,soya chunks,cashews,turmeric powder,chili powder,lime juice and salt.Mix it well and close with a lid.when the oil starts floating add the the rice and mix well so that the rice is coated with gravy.pour the water and boil till all the water gets evaporated.Now give a stir ,close it and cook in simmer for 10-15 mins.
Serve with any raitha.
Notes
adjust the spice level as per ur taste.
you can cut the soya chunks into halves. I prefer to cut since all the flavours will be a absorbed.
