Maharashtrian sweet snack
Diamond cakes, Maida biscuit
Ingredients | |
---|---|
2½ cup | Maida flour |
1¼ cup | Sugar |
¼ cup | Oil (for kneading) |
2 cup | Oil (for deep frying) |
¾ cup | Water (approx) |
Instructions
1. In a mixing bowl mix in well maida and sugar
2.Knead with water, using little at a time
3.Finally knead with 1/4th cup of warm oil
4.Set aside for about an hour
5.Now make 8-9 balls out of it. Roll out like a roti dusting with some maida flour to 2mm thickness. With a knife cut it horizomtally and vertically into small squares or diamonds.
6.Heat oil in a kadai and fry them over mediumto high flame
7.Cool them completely before storing in an air tight container for 3-4 weeks

A good tea time snack
May be refrigerated for longer shelf life

Hi Raechel.. I was very happy when i saw this recipe. It reminded me of my mom. Tried it. The outcome was perfect. Finally i just dip it in the sugar syrup(like the way we do for other sweets)3 cup sugar with 3 tsp water.I made a big batch and stored it. We enjoyed it. Thanks for sharing this recipe.VIJI
