Kale greens are highly nutritious vegetable relating to the wild cabbage family. Fresh kale leaves when sauteed and seasoned in our Indian style taste similar to that of Murungai keerai (Drumstick leaves).

This meen kuzhambu is just like any other regular kuzhambu preparation except its made with a fresh blend of spices and sauteed in pure sesame oil which gives life and brings out that finger licking flavour.

Paruppu Usili is a South Indian dry lentil curry preparation. Paruppu ~ lentil, Usili ~ Crumbled is teamed with Asparagus to form a scrumptious poriyal. Asparagus ??? quite a scary veggie for first timers to inculcate in Indian cooking. But trust me… it tastes pretty decent compared to Broccoli. In my opinion, fresh raw asparagus tastes like raw peanuts (crunchy and munchy) and cooked tastes somewhere between soft green peas and beans.
Poli is a trditional sweet stuffed with channa dal and jaggery.
Green brinjals sauteed in Idli milagai podi with rich seasonings. This quick veggie fry is very popular among Mudaliar community in some parts of Tamil Nadu. Happened to taste in one of my friends place and since then was craving for this dish. Traditionally its made with purple brinjals but tried mine with Thai eggplants for a change.
Normally we would fry the medhu vadas as soon as grinding the dal. Here's an easy way to store and fry at a later time. Soak dal and grind the batter, add all seasonings and veggies. Fry them over medium high flame until slightly cooked on the outer. Immediately remove and cool completely. When done refridgerate in air-tight box or ziplock bags for few days. Re-fry them again until golden whenever necessary. Ground Urud dal batter without garnishes and veggies can be refridgerated upto a day.
This recipe is usually prepared near south Tamil Nadu ( kanya kumary district) where plenty of sea foods are available and you get them fresh too..
this is a tasty kind of rice eaten along with tamatar ka cut.
