Onion Bhaji

Indian vegetable fritters.

Ingredients-1
2 cup Gram flour (500 grams approx)
2 tbsp Rice flour
2 tsp Red chilli powder
1 pinch Baking soda
Ingredients-2
2 cup Bhaji flour (using ingredients from table-1)
 3/4  teaspoon Salt (or to taste)
1 no Onion (cut lengthwise)
½ cup or as needed) Water
4 cup Oil

Instructions

Make Bhaji flour by mixing thoroughly all ingredients from table -1 while its still dry. Mix salt and add water gradually to avoid lumps. Make a smooth paste consistency, which is just enough to dribble off a spoon. While making this, heat oil in wide kadai, when its all ready, dump onion in the batter and deep fry. Drain in a paper towel and serve with tomato ketchup or sauce.

Notes

Fry them in batches; secret of crispy bhaji is to fry them on medium flame; Avoid soaking onions for a long time in the batter, it would release water and make the bhaji soggy.

    Before adding water,if u add hot oil(1tsp)into the bajji flour u will get crispy bajji without using baking soda.Just sharing

    i tried this baji, it came out well & the taste is nice.Good idea to add cutted onion instead of usual use.

    Hi Mullai!!!
    I tried this receipe for my evening snacks today….
    and that came out really awesome!!! my husband like tat very much.
    I have added 2 tblspn of corn flour rather than rice flour, the cripiness retained longer…

    Mullai,

    I have made onion bhajji without adding any water to the flour. Just mix the onions with the ingredients (I also add a pinch of asafoetida) – onions let off their own juice which are adequate.

    Hi Mullai, i have a doubt..Is Baking Soda and Baking powder are same ? Can we use the baking soda which is available in American Grocerry’s ? B’coz in India they will sell in a 2 inches box, but here in American Stores they are selling in lbs. So…confused to buy those so i returned back…

    What is the difference b/w Baking soda and Baking powder ? Pls clarify – shan
