| 1 pack | Instant noodles (any flavor) |
| 2 cup | Choice of vegies (carrots, bell peppers, cabbage and sprouts 1/2 cup each) |
| 2 nos | Green chilli (minced) |
| 1 inch | Ginger (minced) |
| 2 clove | Garlic (minced) |
| 2 stks | Spring/green onions (finely chopped) |
| 4 tsp | Oil |
| 1 pinch | Salt (just for the vegies) |
| 2 cup | Water |
Instructions
In a shallow pan heat oil and stir fry the vegies except spring onions on meduim high flame. Along with that add finely minced green chillies, ginger and garlic with a pinch of salt. Meanwhile take a deep pot or pan and boil 2 cups of water for one packet of noodles. When water starts to boil add noddles and let it cook for few minutes, until it turns soft and chewable. Drain the excess water from the noodles using a colander and immediately transfer it to the sauteed vegeies and sprinkle the spice mix which usually comes along with the packet. Stir fry everything on high flame for few minutes using tongs which works better rather than a regular spatula. Garnish with chopped spring onions and serve with any hot garlic or chilli sauce.
