Chicken Masala needs no special intro as its one of the most common non vegetarian side dish. Its more like a staple in my home, basically its easy to make and also literally pairs well with anything. Today, i will be sharing a spicy version Tamilian style Chicken masala / Kozhikari masala recipe which involves just a few simple everyday ingredients from your pantry.

Chicken Masala
Ingredients
- 1/2 kg Chicken bone in
- 1.5 cups Onion finely minced
- 1 tbsp Ginger Garlic paste
- 1/2 cup Tomato
- 4 each Green chilli slit open
- 1 each Dry red chilli
- 1 tsp Fennel seeds
- 1 tsp Cumin seeds
- 6 each Curry leaves
- 1/2 tsp Turmeric powder
- 2 tbsp Coriander powder
- 2 tsp Red chilli powder hot variety
- 1.75 tsp Salt or to taste
- 1/2 cup Water
- 4 each Curry leaves for garnish
- 1/4 cup Coriander leaves for garnish
- 1/4 cup Oil
Instructions
- Heat oil in a pan or a pressure pan.
- Temper with dry red chilli, fennel seeds, cumin seeds, curry leaves and green chillies.
- Add finely minced onions and fry until it turns transparent. (5-6 minutes, medium high flame)
- Once the onion turn lightly translucent, add in ginger garlic paste and saute along for few minutes.
- Followed by chopped tomatoes and cook along until it turns mushy. (2 minutes)
- Now add in chicken along with turmeric powder, coriander powder, spicy variety of red chilli powder and salt.
- Saute the masala powder along with the chicken for few minutes.
Cooking Method
- You may choose to cover and cook the masala or pressure cook.
- Cooking covered in a regular pan takes time. Pressure cooking saves time and also helps to cook the bone-in chicken thoroughly in a short time.
- If you choose to the regular pot or pan method, then add water to the chicken. Cover and cook for 20 – 30 minutes over low medium flame.
- If you choose to pressure cook, then put the lid on, seal the vent with the weight and pressure cook up to 2 whistles over medium high flame.
- When done, the consistency of the gravy will be on a thin side. Which is perfect as such if you plan to pair it as a side for idli, dosa, chapati.
- If pairing as a side for rice you may want to simmer for 3 to 4 minutes or until the gravy thickens to a semi thick masala.
- When done, garnish with curry & coriander leaves.
- Switch and its ready to be served!
