Ghee rice

Description

 Basmati rice fried in ghee with sauteed onions and spices, cooked in flavorful coconut milk. This fancy rice dish is served at weddings and other special occasions. (Coconut Milk Rice / Thengai Paal Satham / Thengai pal Sadam )
Ingredients
1 cup Basmati rice
2 nos Onion (cut lengthwise)
2 nos Green chilli (slit open)
3 clove Garlic (crushed)
1 cup Fresh coconut milk (consistency thick)
1 cup Water
¼ cup Ghee
2 nos Bay leaf
2 nos Cinnamon
3 clove Cloves
3 nos Cardamon
1 no Star anise
½ tsp Cumin seeds
¼ tsp Fennel seeds
6 nos Cashews
10 nos Curry leaves
½ tsp Salt (or to taste)

Wash and drain rice and let dry completely in a kitchen towel. Now heat 2 tsp of ghee in a pot and fry the rice over medium flame for few minutes and keep it aside. In the same pot heat the remaining ghee and toast all the dry masala like bay leaf, cinnamon, cardamon,cloves, star anise, cumin seeds, fennel seeds, cashews and fresh curry leaves. Saute onions, green chillies and garlic along with this for few minutes until they turn soft and tender. (do not brown them, cook on low flame)

Now mix  fried basmati rice with 1 cup of coconut milk, 1 cup of water, sauteed onion masala mixture, salt and cook everything together in a rice cooker. When done, let cool, mix little ghee and garnish with fresh curry leaves and serve.

Notes

Tip: When the dish is done, instead of adding ghee directly over rice, slightly heat in a microwave with some fresh curry leaves and then pour over rice and mix gently using a soft flat laddle.

    Hi Mullai ,

    I tried this recipe and it smelled and tasted very good . But the rice was a little bit dry (not soft). Usually I soak the basmati rice in water for 20 mins before I proceed .. Can I do the same for this too ? Can I use store bought coconut milk for this recipe ?

      Masala mixture is nothing but the fried onion with all whole garam masala.

    Hi Mrs Mullai, I just got myself registered a week ago,i have tried a dozen of your recipes,and all have turned out delicious and my husband loved it,especially your vegetable briyani. Anyway i have a question regarding this recipe, in the ingredients table it says 1 cup of rice,but in the Instructions its written mix 2 cups of fried basmati rice.So is it 1 cup or 2 cup of rice for this recipe. Your reply is very much appreciated and one more thing I am your FAN,everyday i check your website for new recipes,thank you so much.

          Nice name!!!! Vazhakkai pepper curry sounds ok, but not for this rice dish. Try any paneer, tofu, potato, Bell pepper side dishes.

      Your request says coconut milk rice and this is how you make it, check on the ingredients. Ghee gives a special taste to this recipe and hence its popularly called ghee rice in most restaurants. If you are looking for Thengai satham which is entirely a different preparation, then you got wait until its posted.
