It's my method of vegetable biryani…..it will come rich in taste, because of coconut milk….try it if you like it.

Vegetable Biryani/ Briyani/ with Soya chunks/ with meal maker.

Ingredients-1
1 cup Basmathi rice (cleaned and washed)
1 cup Mixed vegetables
1 no Onion
1 no Tomato (big) chopped
4 no G.chillies
Handful of mint leaves & coriander leaves
15 nos Soya chunks
½ cnt Curd / yogurt
1 cup Coconut milk
½ tsp Chili powder
¼ tsp Turmeric powder
Salt (as per taste)
Ingredients-2
15 nos Shallots
8 nos Garlic cloves
1½ inch Ginger
Ingredients-3
2 inch Cinnamon stick
4 nos Cloves
½ tsp Aniseeds
1 no Cardamom and black stone flower each
1 no Bay leaf

Instructions

Vegetables you can use—-Potato, beans, carrot, cauliflower,peas, beetroot.

Here i used —- 1 medium sized potato(diced)
1 small beetroot(diced)
10 count beans(cut into 1" pieces)
dried peas(soaked overnight)

Fry the rice in kadai without oil & keep aside.

Grind shallots, ginger and garlic into paste with very little water

Grind into powder the ingredients in list 3 except bayleaf.

Cut the onion lengthwise, slit open g.chili, chop the tomatoes, mint leaves and cilantro.

Heat the pressure pan, pour 1/4 cup ghee and 2 tablespoon oil. Put bayleaf, after 2 seconds add powdered spices(Fry in medium heat). Fry for 30 seconds, now add onion, green chillies and soya chunks. Fry till onion turns to transulent. Then add ground shallots, ginger, garlic paste and fry till raw smell fades. Now add mint and cilantro leaves, fry well. When the leaves started to shrink add tomato and saute' till it becomes soft. Now add all the veges. and salt. Fry till the veges. half cooked. Add curd, chilli
powder & turmeric powder. Mix everything well.
(1) If you want make it in electric cooker add this mix to electric cooker. Pour 1 cup of coconut milk, 1 cup of water and rice, check for salt. cook.
(2)If you want to cook in pan add coconut milk and 1 cup of water with that vege mix, check for salt. Add rice and close the lid. Cook for 1 whistle.
Remove the weight to release the steam after 10 minutes. Serve hot with raita.

    Kavi biriyani is really good….will try out this week end and tell u…..sure…..Wht is black stone flower ? let me search in shop…..if it is not available shall i omit this and use the rest ing…will the taste change?

      Hi divi, thanks pa….black stone flower is kalpaasi, just click on the high light or check in the glossary….it gives u extra masala smell…ya u can omit if u don't get it….my mom always do with kalpaasi, so i've no idea about the taste without kalpasi. Thanks again.

    looking yummy.I too prepare briyani in this way.I grind tomato also with table 2. Yeah coconut milk enrich briyani's taste unga briyani photo paththum pasikuthu..

    Hi,
    i am in NJ.
    Here i am buying canned coconut milk .
    but i don’t like it. When i tried fresh coconut it become dry i am not getting milk.What to do?

      Hi Lekha, try to get milk with hot water after grinding…it may help. Use newly broken coconut, before u keep in the fridge.
