Asparagus Biriyani

Hi all here is my attempt towards making use of international vegetables like Asparagus!! I tried making asparagus masala and it was a hit.Today when i planned to make vegetable biriyani, there was no beans and suddenly i thought why not asparagus in place of beans?! Tried out biriyani with asparagus and it tasted very nice , hence sharing this recipe with u all.
Ingredients
2 cup Basmati rice
½ cup Curd
1 tbsp Ghee[optional]
Oil [as per ur preference]
1 Medium sized onion [cut lengthwise]
1 Tomato[chopped]
1 Green chilly[slit open]
Whole spices[ few fennel seeds,big cardamom, 2 cloves,1 inch cinnamon stick, 1 bay leaf]
1 tbsp Ginger garlic paste
Asparagus[one bunch chopped],peas[handfull],potato[chopped]
1 T Chilly and corriander powder[adjust as per ur taste]
Salt[as per taste]
Corriander and mint leaves [for garnishing]
1 tsp Garam masala powder (optional)

Instructions

1.Take a pressure cooker, add oil and ghee, once when the oil is hot enough , add the whole spices ,Mint leaves and corriander leaves and then add Onion and saute it till it turns translucent.Meanwhile wash the basmti rice and soak it in water.

2.Now add the Ginger garlic paste and green chilly and saute it till it gives a nice smell.

3.Now add tomato and saute it well ,followed by asparagus,peas,potato ,chilly&corriander powder,salt ,garam masala and mix well.

4.Add half cup of curd followed by 2 and a half cup of water and mix well.

5 Now add the Basmati rice,mix well and close the cooker,once when steam comes put the vent and wait for one whistle.Once when u hear the first whistle sim down and wait for 5 minutes and switch off the stove.

6.Wait till the cooker completely settles down.remove the vent and the lid , u will find hot Asparagus biriyani ready.

Notes

1.One cup of basmati rice needs just One and a half cup of water .More water would make the rice very sticky.

2.U can just prepare the same thing in electric cooker and there is no change about the water and other content.

3.To make raitha just add chopped onions[medium sized one] , green chilly[just half] ,corriander leaves finely chopped and salt to the curd and mix well. Raitha is ready.

    Asparagus Biryani sounds very good. Will give it a try very soon. Have you found any diff in the taste between green and white(cream) asparagus?. That plate looks very good with so much of works.. Like your presentation too..VIJI

      Hi Viji Thanx for all the appreciation…I have not tried white asparagus so far…have tried the green one only after seeing urs and Mullai's recipe.U were the ones who inspired me to try new veggies:) Thanx once again.
