Description
Green Peanuts are very hard to find here in USA, only some Indian stores sell them. Raw peanuts sold in most Supermarkets and Grocery Chains are dried and then sold in packing’s. Although dried peanuts can be still considered raw, it cannot be be termed as “Green Peanuts”. These though termed green are not actually green in colour, its the groundnut fresh from the ground(soil) is what they are.

| ¼ no | Carrot (grated) |
| 6 stks | Coriander leaves (chopped) |
| ½ no | Green chili (finely chopped) (medium) |
| 1 tsp | Lemon juice |
| 2 pinch | Chat masala / red chili powder |
Instructions

Wash the raw green peanuts in cold water, rinse nicely to get rid off all the mud. Fill a pressure cooker with water, add salt and raw peanuts and pressure cook up to 2 whistles. Let the steam release, open the cooker and adjust for salt. Normally these are very tender don’t even need pressure cooking, just boiling for 40 minutes over stove to will cook them. But if you think they need some more cooking , the just bring to one boil and simmer until soft and firm.
If using dried American variety peanut, then I would recommend soaking them overnight and then pressure cook upto 10 whistles. These are usually very big and takes longer to cook. Even after cooking they seem to be very firm and too solid. Heavy seasoning with salt required.
Peanut Chat: Remove the shell from the boiled peanuts, toss the boiled nuts with chopped onion, grated carrot, finely chopped green chili, coriander leaves, chat masala and lemon juice. Fill them in small paper potlums(packets) and serve in fancy manner.
