Christmas cake

Description

Christmas cake made with nuts, raisins and all kinds of dried fruits.
Ingredients
1 cup Softened butter
2 cup Powdered sugar
3 cup Maida flour/ all purpose flour
4 nos Eggs
2 tsp Baking powder
2 tsp Vanilla essence
Pinch of salt
½ cup Sugar for caramelizing
10 no Dates (chopped)
1 cup Raisins
½ cup Dried pineapple chunks(chopped)
½ cup Dried papaya chunks(chopped)
½ cup Dried cherry
1 cup Chopped nuts(silvered almonds, cashews)

Instructions

Step 1:

Preheat the oven:

Preheat the oven to 350 degree F.

Step 2:

Preparing dry ingredients:

Sift flour, baking powder, salt and keep it aside.

Step 3:

Mixing wet ingredients:

Separate egg yolks and whites separately. Beat egg whites separately for 5 minutes with an electric mixer. Then add the softened butter to it and continuously mix it with the mixer for 5 more minutes. Now add the egg yolks to it and mix it. Now is the time to add the powdered sugar and vanilla essence. Mix it all together for 2 more minutes.

Step 4:

 

Mixing dry and wet ingredients:

Mix the dry ingredients with the wet ingredients little by little till you get all ingredients mixed together.

Step 5:

Mixing dry fruits:

Using the spatula fold in the chopped raisins, chopped nuts, chopped pineapple chunks.

Hint:

To get brown color cake, take 1 cup of sugar and saute it in a pan 0.5 cup water for few minutes. When it turns to brown color just add it with the cake mixture and stir it with a spatula after adding all the dry fruits.

Step 6:

Bake:

Prepare the baking pan by buttering it nicely just to avoid sticking. Then pour the mixture into the baking pan. Bake in the preheated oven for 25 to 35 minutes. Same old technique to check whether the cake is baked. Just insert a tooth pick in the middle. If it comes out clean its done. Allow it to cool for 5 to 7 minutes.. Before serving dust it with some powdered sugar.

This cake can be baked in small loaf pans for Christmas giving. Can make 2 cakes if baking in 8" round pan.

 

Note:

Please note that the baking time varies for different types of material. When using aluminum pans, non stick pans bake it at 325 F. When using glass pans bake it at 350 F .

Notes

You can soak the dry fruits(dates, rasins) in fruit juice for 24 hours to get better result.

    So, you celebrated this Xmas with this cake. Right, viji? You gave a suggetion to soak the dry ones in fruit juice..can it be any juice?

      Sugan any juice is fine.. People used to soak fruits in RUM for best results. But i don't use that.. Just apple juice is also fine..VIJI

    baking powder u meant is baking soda what we use in India.

      Hi Visitor, You can get baking powder also in Indian store. Better to use baking powder for cakes. VIJI
