Description
Stuffed Rice Roti: This is purely a home made dish prepared with rice flour interior and maida outer layer. It is similar to a stuffed paratha, but we use rice flour for stuffing instead of veggies. Maida forms the outer cover. It’s a very tasty dish ideal for breakfast or dinner. A dish strongly recommended for diet conscious people as it requires very little oil.

Instructions
To prepare the stuffings(Rice Flour Stuffing)
Boil water in a kadai (or a thick bottom vessel) with 1tsp of salt and 1tsp of oil. When it begins to boil add the rice flour to that and stir continuously without allowing it to form any lumps.When the mixture begins to roll out to a smooth dough add 1T of ghee,knead well,remove from fire and keep it aside.Basically the dough shouldn’t stick.Once it cools down,make them into separate balls(Big lemon Size).
To Prepare the outer covering(Maida):
Mix maida in a wide bowl with salt and ¼ cup of water approximately. Knead them to make a soft dough,like how we make for puris and chappathis. Basically the dough shouldn’t stick.Pls do not add all the water at one go.Add little by little till it kneads well.If the the dough seems to be sticky dust it with little more quantity of Maida and knead it properly.

Take a portion of the dough(Maida proportion as shown above)and roll it using a rolling pin to a slightly thin consistency.Roll them to an extent which would be sufficient enough to place the stuffing and seal back.
Place the Rice ball(size as shown in the pic-)inside the Maida.The quantity of rice stuffing should be approximately thrice the quantity of maida taken.Check out the above pic.Seal them properly and then roll them back to a slightly thin consistency.
To cook the Roti:
Heat a non stick pan and when it’s hot enough place the roti and allow it to cook.Then flip it on to the other side and cook for sometime,When it starts to pop up add ½ tsp of oil or ghee along the edges and flip them and cook for some more time.It takes approximately 3-4min for one roti to cook completly.Check out the video for the entire process.

Notes
1.If the rice flour turns sticky then you won’t be able to stuff or roll them. The stuffing would ooze out. So be very careful while preparing the rice dough. Add the exact quantity of water as mentioned. If the rice flour doesn’t turn out sticky then you are lucky to have got the right proportion.
2.If required the Maida balls can be dusted with little quantity of dry Maida before rolling.
