One of the most popular sweet dishes, prepared with milk and malai, served as dessert. 

Rasmalai / Rasamali

Ingredients
1 litre Fat-free half & half
3 cup Sugar
1 lb Ricotta cheese(full fat)
2 pinch Saffron
1 T Cardamom crushed
5 cnt Cashews
10 cnt Almonds

Instructions

Mix the cheese with 1/2 cup or 3 spoon(normal dinner spoon) sugar & little cardamom crushed.Spread out on a baking tray.Bake at 400 degrees for 35 minutes or until it sets.Remove from oven,cool at room temperature and cut into 2 inch pieces.

Grind cashews and almonds coarsely. Mix sugar, cardamom, saffron, ground cashews & almonds and cheese chunks with half-and-half milk. Refrigerate for 2 to 3 hours or overnight. Serve chilled.

 Use full fat ricotta cheese.

      Try google search and you will get many conversion tables. Guess that won't be hard. For your question about granulated sugar, check this wiki link.

    Hi sudha,
    Thanks for tried this recipe.Usually it sets in 35 minutes.If it doesn’t i’ll give some tips.
    1. Use only full fat ricotta cheese.
    2. Ovens may vary .so, bake the ricotta cheese in 400 degree .
    3. Add 3 spoons(normal dinner spoon) sugar for 1 lb(almost)ricotta cheese.If u add lots of sugar ,it makes brown while baking the cheese.

      Hi kavi,

      iam not sure whether i used full fat ricotta cheese.i will surely get full fat next time.i did not  add too much sugar i followed ur recipe. i didnt want the cheese to go brown so kept checking the oven regularly.i wil let you know next time. thanks once again

      Hi kavi, i tried rasamalai ystd it came out good and tasted well too but i found that the cheese wasnt set very well. it wasnt chewy like we get in shops do you think i have to bake it little longer in the oven or is that how your turns out too? please let me know  thanks

    Hi Kavi..

    Thank’s for giving a thought to my suggestions and posting few more pics.Yep,now it looks even more delicious!!!..Those Rasamalai’s r mouth watering..Again one more suggetsion if u don’t mind,in the last pic u cm to have covered the back ground more than the bowl.Zoom them well..so that the bowl alone is visible with a slight depiction of the background..That way the Rasamalai’s would be even more tempting.I really admire the pics taken by Mullai mam..They look very very appealing.My pics looks dull when compared to theirs..These days trying my level best to meet her standards.(hehhe..appuram avangalakum ennakum enna vitheysamnu aiyudum ella??)

Radha thanks for your nice advice.when i’ve posted my husband asked me the same question.’why did u take in black background?’.First time,so i made mistake.I took picture in small bowl with little milk & more malai ,but it doesn’t come well.I made this for diwali.I’ll make rasmalai today & post picture tomorrow.bye.

    Hi Kavi.. I wish I could give this a try but all the ingredients listed by u r to be bought..So shall try to buy this weekend and get back to u with the results. Btw,few suggestions,if u don't mind..U have posted a fantastic dish but then rasamalai is not to be seen,it's fully covered with the milk,cashews and almonds.I very well understand that it has to be immersed in milk.U can do one thing post 2 different pic ,one with rasamalai partially immersed(that way u can c the rasamalai) and the other as shown above with a bright background. I had done this mistake when i had posted for the very first time(Beans paruppu usili).It was totally dark and then on, as per my husband's advise i used to take pics in a white background and that has been a standard background till today. Hey kavi..just a suggestion.pls do not mistake me..
