Beans Paruppu Usili

Description

Beans Paruppu Usili is a south indian vegetable side dish that goes well with rice especially curd rice.

Ingredients-1
250 g Beans (chopped)
1 tsp Mustard
1 no Onion (chopped)
1 tsp Salt
¼ tsp Turmeric powder
2 pinch Asafoetida powder
4 T Oil
6 nos Curry leaves
1 tsp Urad dhal
Ingredients-2
3 T Chana dal
2 T Tur dal
1 tsp Cumin seeds
1 tsp Fennel seeds
3 nos Red chilli
1 inch Ginger

Instructions

Soak Thuvar dhal and Chana dhal for 1-2 hrs.Then Grind all the Ingredients from Ingredients-2(Thuvar Dhal,Chana Dhal,Ginger,Red Chillies,Cumin seeds & Fennel seeds) to a coarse paste; add little quantity of water while grinding, if required.

Heat Oil in a pan and add mustard ,Urad dhal and curry leaves;add chopped Onions ,Tumeric powder and Asafoetida powder and fry until golden brown.Then add the chopped beans (If required, beans may be cooked in the microwave for 4-5min) and fry for another 5minutes.Then add the ground mixture  along with salt and keep stirring till the mixture gets well mixed with the beans and turns to a golden brown color.

Add required amount of oil to the preparation to avoid sticking to the pan.

Average preparation time for this dish is 25-30 minutes.

    Somedays back I prepared this. But, I steamed the ground dhal. Found an easy way now. Shall try the next time…

      Hi Suganswami..

      Yep u can steam them too but to me I feel grinding and frying them in oil gives a very very good taste.If u r diet cautious then u can try the other way round but if u look out for tatse then this is the best method..Anyway's indvidual's choice.Btw I happened to c few of ur recent posts..Nevver bother abt few public comments..Since this is open to public u would receive noth positive and negative comments too..Just ignore the negative comments and keep posting..All the best!!!
