kanchipuram Idli

Description

This is one of the famous recipe of kanchipuram.Its also called kudalai idli.

Ingredients
Salt
3 pinch Asafoetida powder
pinch Baking soda
1 tbsp Oil
10 nos Cashew nuts
2 tsp Cumin seeds
1 tsp Pepper corns
2 tbsp Bengal gram
2 tbsp Urad dal
500 g Idli batter
1 tsp Ghee to grease

Instructions

                            

Heat oil in a pan ,add urad dal and bengal gram.fry them till golden brown.Now add pepper and cumin seeds.roast them till the pepper starts to crackle.fry the cashews seperately and add all the fried  mixtures to the idli batter.mix well  adding little asfoetida powder and baking soda .Pour the batter inside the greased tumbler.steam as you cook regular idlis for 10-15 mins.

                          

 

                          

        To check if the idlis are cooked, wet a knife and just pierce it through the idli,if it is cooked you will notice that the knife would be non sticky.once its done allow the idlis to cool down.

   To take the idlis from the mold,put a knife and just cut along the rim till  you reach the bottom.Now if u turn upside down ,you will get the a tumbler shaped idli.serve it with idli podi or mint chutney.

 

                          

Notes

you can add green chilis and ginger if you like it.

while grinding the idli batter see to it that the rice is  corsely grinded.

baking soda is optional.

    Hi Sujatha,

    I am a North Indian and like idlis very much but here i do not have idli pot and i don’t know how to prepare idlis without that. Can you tell me how you steamed the idlis in those tumblers.. can we do that in a pressure cooker? if yes, how?

      hi shanu,

            Yes you can steam it in pressure cooker.pour 2-3 tea cups water inside the cooker and place the tumblers,just close the lid dont put the weight.Let it cook in medium flame for 10 mins,check if it is cooked.otherwise put in simmer for 5 mins.

          Try and let me know how it turned out.you can also try it  in electric rice cooker.Hope this helps you .
