Zucchini Kootu

Description

Simple Kootu curry made with Zucchini or Courgette.
Ingredients
1 no Zucchini
1 no Onion (diced)
½ no Tomato (diced)
1 no Green chilli
½ cup Bengal gram
¼ cup Fresh grated coconut
¼ tsp Turmeric powder
¼ tsp Asafoetida powder
1 no Dry red chilli
¼ tsp Mustard
¼ tsp Cumin seeds
¼ tsp Split black gram
4 nos Curry leaves
¼ tsp Salt or to taste
2 tsp Oil
½ cup Water

Instructions

Wash and soak Bengal gram (Kadala paruppu) for at least 1/2 hour. Pressure cook chopped zucchini, bengal gram, chopped onion tomatoes and green chilli with turmeric powder, salt and 1/2 cup water. Cook up to 1 whistle and switch off.  Now heat oil in a pan and season with mustard, cumin seeds, split black gram, dry red chilli, asafoetida powder and curry leaves. Transfer the pressure cooked dal and veggie to this and add  fresh grated coconut. Mix well to combine, simmer for couple of minutes and serve hot with plain rice.

Notes

Do not add more water, the consistency should be thick, too much mixing will break the bengal gram and make the dal watery. Consistency should be semi-solid.

    Can you post any recipe for chayote (cho-cho)? I just use for making Sambar with other veggies.
