Description
Water Spinach is one of variety of spinach..with plenty of vitamin A n C..can find it out in chinese n vietnam stores…Its used very much in chinese cuisines..its a regular side dish for SouthEast Asians with their bowl of rice..
Ingredients | |

1 cup | Water spinach(chopped) |
½ cup | Coconut(grated) |
5 clove | Garlic |
4 nos | Red chillies |
1 no | Onion ( chopped) |
½ tsp | Mustard seeds |
½ tsp | Split ulundu |
Water (for sprinkling) | |
Salt (as per taste) | |
3 nos | Curry leaves |
Instructions
Heat oil in a pan n spultter the mustard n ulundu dal..add red chillies..fry it
add onion and stir it well..when its transparent add garlic..stir for 2 minutes
Add the chopped water spinach with onion n garlic n add salt…turn it continously..dont add much water..just sprinkle some water n cook for 10 minutes in sim..add grated coconut n put off the stove..it will be slightly crunchy.
Shouldnt cook for a long..certain veggies need to cook for a long but this water spinach need just a short period to cook..else it will lose vitamins,as it contains sufficient amount of vitamin A n C.

in tamil also its kangkung i guess… coz i know there is a keerai called kangkung….
