Vendakkai Sukka

Description

Vendakkai Sukka (Okra / Ladies finger) is a dry fry item mostly served with rice. A simple twist to this regular fry is adding Idli milagi podi instead of regular masala powders. This gives this dish a unique flavour and special homely touch.
Ingredients
15 nos Vendakkai
1 no Onion (finely chopped)
3 clove Garlic (finely minced)
¼ tsp Turmeric powder
½ tsp Salt (or to taste)
5 tsp Oil
4 tsp Idli milagai podi
¼ tsp Mustard
¼ tsp Cumin seeds
¼ tsp Split black gram
10 nos Curry leaves

Instructions

Wash and cut Vendakkai into 1 " pieces and set aside. Heat just 3 tsp of oil in a wide frying pan and shallow fry the Vendakkai pieces until they turn light brown. Do not cook them till death, fry until they are just tender on the inside and crispy on the outside. Remove them from pan and keep aside. Now in the same pan add the remaining oil and splutter mustard, cumin seeds, split black gram and curry leaves. Fry chopped onions and garlic for few minutes and add the shallow fried vendakkai to this along with turmeric powder, Idli milagi podi and salt. Fry until everything blends to form a dry mixture, takes about 3 to 4 minutes on low flame. Switch off serve hot with curd rice.

      Idli milagai podi is nothing but Idli podi and it is made with ulundu, dry red chilli, perungayam and garlic
