Vegetable Biryani

Description

This is a Saturday special lunch at my home.I make this on days when me and my Hubby are  Vegetarian :P. Hope u will like this recipe.
Ingredients
2 cup Basmati rice
½ cup Curd
1 tbsp Ghee[optional]
Oil [as per ur preference]
1 no Medium sized onion [cut lengthwise]
1 no Tomato[chopped]
1 no Green chilly[slit open]
Whole spices[ few fennel seeds,big cardamom, 2 cloves,1 inch cinnamon stick, 1 bay leaf]
1 T Ginger garlic paste
1 cup Beans,carrot,cauliflower,peas,potato[chopped]
1 T Chilly and corriander powder[adjust as per ur taste]
Salt[as per taste]
Corriander and mint leaves [for garnishing]
1 tsp Garam masala powder (optional)

Instructions

1.Take a pressure cooker, add oil and ghee, once when the oil is hot enough , add the whole spices ,Mint leaves and corriander leaves and then add Onion and saute it till it turns translucent.Meanwhile wash the basmti rice and soak it in water.

2.Now add the Ginger garlic paste and green chilly and saute it till it gives a nice smell.

3.Now add tomato and saute it well ,followed by the vegetables ,chilly and corriander powder,salt ,garam masala and mix well.

4.Add half cup of curd followed by 2 and a half cup of water and mix well.

5 Now add the Basmati rice,mix well and close the cooker,once when steam comes put the vent and wait for one whistle.Once when u hear the first whistle sim down and wait for 5 minutes and switch off the stove.

6.Wait till the cooker completely settles down.remove the vent and the lid , u will find nice and hot vegetable biriyani ready to be relished.

Serve hot biriyani with Raitha.

Notes

1.One cup of basmati rice needs just One and a half cup of water .More water would make the rice very sticky.

2.To make raitha just add chopped onions[medium sized one] , green chilly[just half] ,corriander leaves finely chopped and salt to the curd and mix well. Raitha is ready.

    I really wanted to take time to comment about your recipe which I prepared last weekend and came out very well unexpected by all of us.

    First time I’m cooking veg. briyani and couldn’t believe it tasted delicious. That half a cup of curd did really a miracle of bringing in the taste. Thanks for it. Keep posting more recipes.

    hi, sadhana.hw r u.this recipe looks very tasty. i prepare the gravy in the same way. but the rice is first partially cooked,and then i add rice and gravy in layers and keep it on DUM .
