Description
Vazhakkai Curry:A classic,versatile Mustard based Andhra style curry that can be prepared with effortless ease.This curry is perfectly seasoned with spices, especially the flavor of Mustard powder accentuates the currys distinctive taste.Very quick, simple to prepare,healthy and makes a great side dish with hot rice or rotis.

2 nos | Raw plantain |
2 pinch | Turmeric powder |
2 pinch | Salt |

3 T | Coconut grated |
1 no | Green chilli |
1 T | Mustard seeds |
1 tsp | Fennel seeds |
1 inch | Ginger |

1 tsp | Uradh dhal |
1 no | Green chilli |
2 pinch | Asafoetida powder |
2 pinch | Turmeric powder |
1½ T | Oil |
1 strands | Curry leaves |
1 tsp | Salt (as per taste) |
Instructions
1.Peel and chop the raw plantains to medium cubes as shown above.
2.Boil the chopped plantains with a cup of water,a pinch of turmeric and salt and cook till they turn soft.Do not over cook them b'se they tend to mash very fast.Approximately it takes about 5-6min to turn to a soft consistency.
3.Toss the Green chilli alone with a drop of oil before grinding,by doing so,the raw taste of green chilli fades off.Then grind all the above ingredients from table-2(as shown in the above pic)to a coarse powder.Do not add water while grinding.
4.Heat oil in a pan,add the mustard seeds and let them pop. Then add the uradh dal,curry leaves,green chilli(Slit open)and asafoetida powder and toss for few minutes i.e till it turns to golden brown color.
5.Add the cooked plantain pieces along with ground spices and required amount of salt and saute well.Plantain at this stage would be, as shown.
6.Cook them for 4-5min in a sim flame and do not keep stirring often as it would mash up the plantains.
Serve with hot rice!!!!
Notes
1.Vary the qunatity of Mustard used for grinding as per the plantain size.If u feel that the plantains are very big(Bigger than what's shown above) then 1.5T of mustard can be used.If it's small ones 1T should be sufficient.

Thank's !!! looks like Vazhakai is ur favourite Vegetable..I do have but ,it would take some time for me to post the recipes as I am currently on an vacational trip.once I am back i shall surely keep ur request in mind and would post it for sure.Till then keep trying the rest!!!

I totally forgot vazhaikaai after coming here… God!!! I loved it when I was at home……. I fry vazhaikai cubes, also some brinjal and make a kindda vatral kuzhambu… It tastes simply superb…Sometimes even add a handful of mysore dhal (the orange one)… I wanna try this but right now no patience and time…. Now we are thinking to pass those recipes to our cafe cook… Thats a better way for now.. he he… All your recipes are different…. Good wrk…..

That’s a great news.Happy that it turned out well.Actually the quantity of mustard can be varied as per the size of the plantain.If it’s small in size u can cut down the Mustrad to 1T.That would be sufficient.Anyways I shall put down this note in the additional note section.Next time try it out with actual quantity of mustard.When green chillies r used up without tossing it gives a raw taste too.So avoid using it raw.All the very best for ur next venture!!!
