This is famous South Indian dish prepared by my Mom whenever there is an ocassion or when the weather is cool or when its raining or whenever i wish…
Ingredients | |

1 cup | Urad dal |
1 T | Cumin seeds |
2 strands | Coriander leaves (finely chopped) |
1 strands | Mint leaves (chopped) |
1½ no | Onion (finely chopped) |
1 no | Green chilli (finely chopped) |
1 pinch | Baking powder |
½ T | Salt (as per taste) |
3 cup | Oil (for deep frying) |
Instructions
Step 1: Soak Urad Dal for atleast 1 hr and grind it without adding any water at first and then start adding little amount of water until all the dal has been grinded into a paste.
Step2: Heat oil in kadai under low flame.
Step3: Add all the rest of the ingredients to the batter and mix thouroughly and taste the salt,if it is less u can add according to your taste.
Step 4: Now take a steel meals plate and invert it and place a kerchief or a clean cloth on it, take some water in a bowl and spinkle some water on it and rub it with your hand and now mix the batter properly and take some and start placing small size batter on to the plate(usually size of small lemon) and make a hole in the center(preferably small hole) and spread the batter properly in the form of a circle.
Step 5: By this time the oil might got heated properly,Start placing the vada's by holding one end of the kerchief or cloth with ur left hand and taking the vada with ur right hand fingers,at a time u can place 2 vada's on the kerchief and after u place them in the kadai wet ur hand in the water bowl placed near by you and rub the hand on the cloth and repeat Step 4 from 2nd line
Notes
You dont even need a chutney for this vada.
Make sure that u start doing the vada's immediately after u add all the contents and make sure that ur batter should be thick paste before u add the rest of ingredients.
You can even add dry mint leaves instead of fresh ones.
And it's not compulsory to add the same proportins of the ingredients to the batter as i have given, u can vary the quantity depending on ur taste also…
