Tomato pickle is a very tasty one, which is very simple and mouth watery too!!! Here is how I prepare it. Please try and let me get the feedback.
Ingredients:
Tomatoes – 1 kg
Gingelly oil – 200 g
Red chilli powder – 50 g
Roasted mustard powder – 30 g
Roasted fenugreek powder – 10 g
Turmeric powder – 1 tsp
Crystal salt – 100 g
Asafoetida – 1 tsp
Sodium Benzoate – 1/2 tsp
Acetic acid – 1 tsp
Garlic – 25 g
Tamarind – 100g or Citric Acid – 1 tsp
Description:
Wash the tomatoes and cut into small pieces. Add salt and turmeric powder and keep separately. Heat the oil in a vessel and add peeled garlic. Fry little and then add tomatoes already mixed with salt and turmeric powder and fry well till the entire water content goes off. Now, add tamarind extract or Citric Acid. Fry well for about five minutes (in case of additing tamarind extract) and then add chilli powder, mustard powder (you can even add whole mustard seeds if you don't prefer the sour taste of its powder), fenugreek powder, and asafoetida. Fry for another five minutes, remove from fire and add Sodium benzoate and Acetic acid. Mix well and fill them in well cleaned, dry bottles.
Note:
1. Garlic is optional.
2. Sodium benzoate is a preservative. If adding this, we can use for longer duration, otherwise pickle will get spoiled soon.
3. This pickle goes well with curd rice, any type of rice varieties and even breakfast items like idli, dosa etc.
