ING.
Urad dal-3/4 cup
Water -3/4 cup
Ginger garlic paste-1 tsp
Salt-1/2 tsp
Green chillies-2
ING. for curds
Cumin seeds fried and grounded-2 pinch for 2cup curd
Salt-1/2 tsp
sugar-2 pinches
Thick curds-2cups
Chilli powder for garnishing
Fresh plain karaboondi if available to garnish
Method
1.Soak urad dal in water for 1/2 hr.
2.Wash and drain water.
3.In wet grinder grind dal,g.chillies,g.g.paste and salt adding water at regular intervals until fluffy and smooth for 45min.
4.when done drop a handful of dough placing a hole in the centre in hot oil,and turn to the other side when cooked.
5.See to it that it doesn't turn golden brown.
6.After straining oil dip all vadais in butter milk.
7.while serving beat curds with above ing.and soak all vadai's in a broad vessel and garnish.
