Adding oil to the masala keep the masala intact while frying. Also Bhajji Bonda mix is a blend of rice flour, gram flour and other spices helps for that crusty crispy finish. Folks are skeptical of using yogurt in fish recipes can use little tamarind puree instead.
Flip to the other side and keep frying.
Meanwhile mix the reserved masala paste with thin cut onion, ginger, garlic and curry leaves.
Just mix it up with your hands… squeeze those onions with the masala until they sweat.
Sprinkle it all over the frying fish and drizzle a little oil.
Fry for another couple of minutes or until the onions turn crispy. Switch off and garnish with chopped coriander leaves.
