Rogan Josh

Description

Rogan Josh is a mutton gravy from kashmir with lots of spices.
Ingredients
¼ kg Mutton(clean and cut into small pieces)
½ cup Curd
2 nos Medium size onion
3 nos Tomatoes – chopped
½ tsp Ginger garlic paste
1½ tsp Kashmiri red chilli powder
½ tsp Red chilli powder
pinch Turmeric powder
¼ tsp Poppy seeds
½ tsp Shahjeera
¾ tsp Corainder powder
4 nos Cardamons
3 nos Cloves
6 nos Peppercorns
pinch Nutmeg powder
2 T Coconut powder
6 nos Almonds
Little mace
Salt
Oil
¼ tsp Garam masala
Coriander leaves (for garnishing)

Instructions

Roast poppy seeds, shahjeera, almonds, cloves, peppercorns, mace, coconut(fresh/dessicated), nutmeg, 4 cardomons and grind with dry powders turmeric, kashmiri chilli powder, coriader powder and red chilli powder with little water .Keep this aside.Grate onions.

Heat oil in a pressure cooker add 2 cardomons and onions fry till golden brown .Add ginger garlic paste fry .Add the spice paste and fry for a minute .Add tomatoes and curd .Keep frying till tomatoes are mashed .Add salt and mutton fry add little water  and pressure cook till 1 whistle then reduce the flame and let cook for 10 to 15 min . Garnish with coriander leaves and 1/4th teaspoon garam masala

Notes

Served with nan/roti or with ghee rice/jeera rice.

    Hi Latha

    I made this recipe with chicken… turned out very tasty and different… similar to some restaurant chicken. I added lemon juice and kasoori methi to the taste. Very nice… waiting for more kashmiri recipes…
