Having trouble boiling a perfect hard boiled egg?? Here’s a simple method which I follow which gives perfectly cooked boiled eggs each time.
How to Boil Perfect Hard Cooked eggs ? / Hard Boiled Eggs / Muttai / Vegavaitha Muttai / Steamed eggs / Mutta

4 nos | Large Eggs (raw) |
4 cups | Water |
Instruction:
Arrange the eggs in one layer in a thick sauce pan. Pour enough cold water to cover them by atleast a few inches.
Place the pan over high heat uncovered. Start the boiling process . Once the water starts to boil (the time when the water actually comes to a rolling boil and eggs starts to move around) , bring down the flame to medium high and cook for 12 minutes.
Once done switch off and cover the pan with a lid and let it sit and set for 10 minutes. Then shock them by running cold water in the pan and again let them sit for another 5 minutes.
This process actually shrink the eggs little bit inside the shell making easier to peel. Now crack the shell of each egg by grasping the egg in one hand and gently tapping on each end. Once loosen, peel the shell off.
Notes:
Yield- 4 Boiled eggs.
After few mess ups, these are the lessons learned…
1. This recipe is for large sized eggs, so adjust time according to the size of the eggs.
2. To much boiling will yield rubbery texture of the yolks also end up having gray or greenish yolks.
3. Do not use this method for fresh farm eggs, use old refrigerated eggs.

Hi, instead of doing this you can use cooker for boiling eggs. In pressure cooker pour water to cover eggs and place eggs . Add little salt and close the lid . After one or two whistle switch off the flame. Wait until Pressure release. pour cold water on eggs. Peal off the shel.
