Khoya / Mawa, is a dairy product used as a base for making many sweets and gravies. Milk is boiled and reduced to semi- solid state, which looks like a thick sticky mass. Based on the consitency, khoya can be classified into 3 types.
1. Firm Khoya / Bhatti – Milk boiled and reduced to a thick paste and later molded to make it firm, used for burfis.
2. Soft Khoya / Chikna – Milk boiled annd reduced to a sticky paste, used for halwas.
Easy and quick dessert, which can be fixed in minutes to satisfy a large crowd. This item would be an easy pick for parties and other special occasions.
Famous sweet dish from Karnataka, made with Gram Flour (Chickpea Flour / Kadhalai Maavu / Besan) and sugar, mixed with generous amount of ghee, to make it, the most craved dessert item of South India. Quality ingredients, measures and method are very important to prepare this, every step counts, light change in any of the above might end up turning into a thick stone. Actually there are 2 different versions, the soft way (like the famous Sri Krishna Sweets Mysore Pak) and the crumb-lee version (slightly thick with crumblier texture on the top, like how, street side sweet walas make). Here, I've attempted typical home style soft version, though, not great looking, turned out with a decent taste and texture.
My favorite sweet. Also can see that many requesting for it for long. Thus, I am posting the one I learnt from Meenakshi Ammal's Samaithu Paar .
Burfi made with fresh grated coconut, milk and sugar. Made during diwali season this chewy treat is the best of all sweets. Often this item is made with just sugar and coconut, whereas this recipe is slightly different, i have used milk to make it little rich.
