Nei Urundai is nothing but laddu made with moong dal / payatham paruppu. This is one easy and healthy laddu which you can prepare quickly with few ingredients for any festive occasion or even as a healthy eve snack for kids. At our home we usually make these for Sri krishna jayanthi and during deepavali time. You can never go wrong in this recipe…and in minutes you have a great laddu to treat your family and friends.

Ingredients     
 Moong dal  1 cup
 Sugar  1 cup
 Cardamon  2
 Cashews  15 broken into small bits
 Ghee  6 tablespoons + few teaspoons

Lets see how to make this nei urundai

Recipe is pretty easy. Dry fry the yellow moond dal / pasi payir / payatham paruppu in a kadai till it releases nice aroma.  Do not brown too much, we need light golden tinge on the dal. Switch off and cool that completely. Combine sugar with cardamom in a mixer jar and make a fine powder. Then powder the roasted moong dal to fine powder. You may sift the moong flour if you want using a fine sieve.

Combine moong flour, powdered sugar & cardamom in a bowl. Heat ghee in a tawa and roast cashews till they are golden and then add that to the flour mixture. Mix using a spoon to a crumbly texture. Roll them into small balls while its still warm. It may appear sticky while making the balls but once cooled for about 15 minutes they become firm.

Notes

  • You may use store bought moong flour but try to roast it before use.
  • To get soft laddus, sieve the moong flour.
  • Usually we at home use 1:1 flour : sugar ratio. You may cut down on the sugar if you like.
  • As the name implies.. Nei(ghee) urundai- the amount ghee mentioned above is a must for soft melt in your mouth type laddus.
  • Makes 15 small laddus.
