Mutta Bajji
Ingredients
Ingredients – for boiling and pan frying
- 4 large Eggs
- 3 cups Water
- 2 tablespoons Oil
- 1 tablespoon Coriander leaves chopped, for garnish
Ingredients – for coating
- 1 large Egg beaten
- 1 teaspoon Gram flour / Kadalai maavu / Besan flour
- 1/2 teaspoon Red Chilli powder
- 1/4 teaspoon Turmeric powder
- 1/4 teaspoon Black pepper powder coarsely crushed
- 1 tablespoon Onion finely chopped
- 1 each Green Chilli chopped
- 1/4 teaspoon Ginger Garlic paste or finely minced
- 1 tablespoon Coriander leaves chopped
- 2 leaves Curry leaves chopped
- 1/8 teaspoon Salt
Instructions
- Boil eggs in enough water, peel and cut them into half and keep them aside.
- Beat an egg, whisk in along with gram flour, red chilli powder, turmeric powder, black pepper powder and salt. Beat until well blend to remove any lumps from the flour.
- Add in chopped onions, green chillies, ginger garlic, coriander and curry leaves.
- Heat oil in a frying pan and dip each halved egg in this mixture to coat it all over and place it on the tawa.
- Cook one side until it firms up a bit and then flip to the other side and cook until coating becomes crisp. Garnish with coriander leaves.
- Remove and serve as an evening snack or as a side dish with any meal.
Prawn bajji Chicken Bajji Nethili Meen Bajji
Boil eggs in enough water, peel and cut them into half. Keep it aside. Beat an egg, whisk in along with gram flour, red chilli powder, turmeric powder, black pepper powder and salt. Beat until well blend to remove any lumps from the flour.
Add in chopped onions, green chillies, ginger garlic, coriander and curry leaves. Heat oil in a frying pan and dip each halved egg in this mixture to coat it all over and place it on the pan cut side down.
