Mozzarella Bread Rolls – Cheesy soft bread rolls for a quick evening snack. Bread flour is used for this recipe which usually yields slightly chewy, but soft dense texture bread. Most cafeteria here used to have this similar kind of soft white bread sticks which i always crave for …. as there is no escapism, the whole corridor smells like Parmesan cheese and just makes irresistibly hungry during mid morning breaks. So… tried that at home too which was so easy and satisfying. This can be also made using all-purpose and its quite similar process wise with slightly change in measures and temperature. Try both and have fun.

2 tablespoon | Oil |
½ teaspoon | Salt |
½ tablespoon | Sugar |
2¼ teaspoon | Active dry yeast |
1½ cup | Bread flour |
2 tablespoon | Parmesan cheese (powder)(optional) |
¼ teaspoon | Garlic powder |
4 strips | String mozzarella cheese |

Table- 1 ingredients are for making thicker bread rolls… using bread flour.
Warm up the water to slightly lukewarm stage and dissolve yeast along with sugar. Mix and let it stay undisturbed for 5 minutes. It will bubble up as shown and becomes frothy.

Meanwhile sieve bread flour and salt in a bowl, add oil and yeast mixture and knead to form a dough ball. Lucky ones with stand mixer can do this in minutes. Unlucky ones with no stand mixer have to use your hands and rolling pin to knead the dough for 10 minutes until it softens.

Apply oil to the dough ball and cover with a plate or towel and let it rise in a warm place for 1 hour. I usually keep near the stove while cooking other stuff to catch up little warmth for the dough.
Magic happens after an hour, the dough rises or doubles.
Punch the dough and make four equal rolls.
Roll out each dough ball in rectangular shape and place one string cheese.
Cover and seal as shown. Make sure its sealed properly or else the cheese will ooze out while baking.
I used a square pan, you can use any sheet pan or oven proof tray for baking. Oil them on all sides.
Place the sealed mozzarella rolls like shown, giving little gap in between. Cover them with a towel and let it sit in a warm place to rise again. Give about 40 to 45 minutes.
They will puff up as shown, now brush with oil and sprinkle little powdered Parmesan cheese and garlic powder and sesame seeds. (optional)
Preheat oven to 300 F, place the tray in the middle rack and bake for 40 minutes or until the crust turns slightly brown.
Switch off and sprinkle some more Parmesan cheese on top while they are still warm. Separate the rolls carefully with a knife and serve with marinara or pizza sauce. These can be stored at room temperature for 2 days, reheat in a microwave for few seconds and serve.

Any type of all-purpose flour is fine.. but if you use bleached all purpose it will turn out white like the ones you get in stores. The procedure is the same as the above, just use the quantity mentioned for this recipe. The rolled out dough should be slightly thinner so that they turn slender and long. Preheat oven to 350 F, place them in middle rack and bake for 15 to 20 minutes.
Garlic powder sometimes can brown a little bit, so if you don’t like.. avoid using. Parmesan cheese is a must and what which kicks up this recipe.

- Yields : Mozzarella Bread Rolls 4 (7″ x 1 1/2 “)
- Yields : Mozzarella Bread Sticks 4 (6″ x 1/2 “)
- You can use the same recipe and shape them like store bought bread sticks with plain dough instead of stuffing them. Roll out the entire dough(Table-2) like a big rectangle and cut them into long strips and then bake.
- Sprinkling Parmesan cheese is optional but gives nice flavor.
- Sprinkling sesame seeds are optional.

Can I use regular Atta (Aashirwad Flour) instead of all purpose flour for this receipe?
