Pilaf is a dish in which rice is cooked in a broth, sauteed in oil or butter along with veggies and herbs topped with dry fruits and nuts! I’ve been a big fan of pilaf ever since I tried middle eastern cuisine and been experimenting quite a few…. my fav being the herb pilaf with nuts and this time its parsley’s turn. I do get a lot of cilantro from market as our traditional Indian recipes are incomplete without them… parsley may be a once in a while affair and gets this transformation, which was very much welcomed at home. Parsley has many nutrition… its rich in vitamin K, vitamin c, iron and has anti-inflammatory properties…. so here you go something tasty to try with it!

Raw Rice (Any Long Grain / Basmati / Jasmine) | 1 cup |
Broth (Chicken or Vegetable) | 1 & 1/2 cups |
Pearl onions / small onions / shallots | 5 (sliced) |
Garlic | 4 cloves (minced) |
Butter (herb or regular) | 1 tablespoon |
Olive oil | 1 tablespoon |
Lemon juice | 1 tablespoon |
Parsley | 1/4 cup (minced) |
Black pepper powder | 1/4 teaspoon |
Salt | 1/4 teaspoon |
Cook rice with broth- Cooked rice using a regular rice cooker and for one cup of basmati rice used about 1 & 1/2 cup chicken broth. Any broth is fine… vegetarian can go with veg broth. Once done fluff up lightly with a fork and keep it ready! (Any flavorful long grain rice is fine)
I have used herbed butter and store bought chicken broth for this recipe. They already include enough salt and all you need is just a dash of it in the recipe. You may have to add add more if making with regular butter.
I’ve added parsley garlic butter and regular cooking olive oil. You may use just olive oil or butter or combination…. heat some in a big frying pan.
Add in minced garlic and sliced pearl onions. Saute them until translucent. Pearl onions are naturally sweet and add a ton of happiness to the dish… do try them!
Now add the minced parsley and saute for few seconds… just to coat and get them with some oil. Sprinkle salt and pepper.
Add the cooked rice to the onion parsley mixture.
Saute lightly to coat the rice with parsley onion garlic mixture. Adjust for salt (if needed). Switch off!
Squeeze in some fresh lemon juice.
Mix and serve!

- Serves 2
- I’ve used Chicken broth for this recipe, swap with vegetable broth if vegetarian.
- Pearl onions add a ton of sweetness to the dish, regular onions are fine too.
- Herbed butter is optional, go with regular butter or just olive oil if you prefer healthy.
- Do not saute too much after adding parley… it may change color. We want the bright green to stay intact!
- Make it more healthy, add in chopped blanched almonds just before serving!
- You may also use try the same recipe with fresh cilantro too!
