Do not fry the kolas.
Chop the onion and tomato. Slit open green chili. Cut the drumstck into 4″ pieces. Cut the brinjal into 8 pieces. soak the brinjal pieces in the water.
Take a thick paste from tamarind.
Grind cinnamon, clove, aniseeds, cardamom, bay leaf into powder.
Don’t grind star anise.
After grinding spices, remove the powder and grind the coconut into paste with little water.
If you want to add mutton bone(Yelumbu), pressure cook mutton with little salt and turmeric powder for 3 whistles. Keep aside.
In a wide kadai heat 2 tbsp oil , put the ground powder and star anise reduce the heat to medium. Then add chopped onion and fry for 2 minutes. Add ginger garlic paste, fry till the raw smell fades away.
Now add tomato, green chili, drumstic, brinjal, chili powder, coriander powder, turmeric powder. Fry for 5 minutes.
If you are adding mutton, then add cooked mutton bone at this stage. If you don’t want to add mutton bone, then add ground coconut paste with required water. The kuzhambu has to slighty thin (not thick nor thin). when the kuzhambu starts to boil simmer the stove. Now drop carefully prepared kolas in the kuzhambu. close with lid. Don’t disturb for another 25 minutes. After 25 minutes open the lid and add tamarind paste, and mix the kuzhambu with laddle. If the kuzhambu is thin, bring in to medium heat and boil for 5 minutes Or simmer for 10 minutes.
Switch off garnish with cilantro. Serve after 1 hour…it tastes really good after an hour.
