Kids School Lunch Box 16 – Carrot Paniyaram with Tomato Onion Chutney

Today’s lunch box is a very simple and healthy pick for kids school lunch. Carrot kuzhi paniyaram  pairing with tomato onion chutney is what i packed for lunch.  I’ve used plain idli dosa batter mixed with sauteed onion, grated carrot, ginger and tempered with some seasonings.

 Ingredients
 Paniyaram batter or Idli Dosa Batter  1 cup
 Small onion / Pearl onion / Sambar onion  3 (finely chopped)
 Green chili  1 (finely minced)
 Ginger  1 teaspoon (finely chopped)
 Grated Carrot  3 tablespoons (grated)
 Mustard seeds  1/4 teaspoon
 Cumin seeds  1/4 teaspoon
 Split black gram  1/4 teaspoon
 Curry leaves  a few (finely chopped)
 Asafoetida  a pinch
 Turmeric powder  1/8 teaspoon
 Salt  not necessary (your batter is already salted)
 Oil  2 teaspoons

Heat oil in a pan, splutter mustard seeds, split black gram, cumin seeds and curry leaves. Saute onions, green chili, ginger and grated carrot along with sprinkle of asafoetida and turmeric powder for few minutes. Add this to the batter (either paniyaram or idli dosa batter) and mix well. Heat & grease the paniyaram pan with little oil and pour a little batter in each kuzhi. Cover and cook for 2 minutes over low medium flame. Now flip to the other side and cook for another 2 minutes or until it gives a golden crust on top. Repeat the process for the rest of the batter and finish.

Packed paniyarams and chutney separately along with a cup of fresh fruits!

Notes

  • Make sure to cool them a bit before packing for lunch. I always use steel boxes which are safe and keep them in a thermal bag.
  • Do not include coconut in the chutney if packing for school lunch, it may go rancid when packed in thermal bags.

    Can we try regular mini idli pans ? They are really small though.

      Rama, thanks for stopping by.. actually mini idli pans will steam them but these have to be cooked with some oil also it will be way too small. You can still try, nothing wrong with it. I something’s make like mini uttappam over dosai Kal which also will be good.

      Nayana, i don’t know where you live..most school lunch bags are insulated but they don’t keep them super hot or anything atleast keep them warm. I got from Walmart here… amazon has it too https://www.walmart.com/c/kp/kids-lunchbags

    Thank you for paniyaram recipe Mulai. Do you have any suggestions about cast iron paniyaram. I want to buy online AS IT is not available locally.

      Hi Gops, I do have an iron pan but with non stick coating… a family friend of ours gave this as a gift

      its all cast iron and yields good results but the size of paniyaram is too big and i don’t use that often. I did see that there is a smaller kuzhi iron pan online with good reviews, try this
