Description

this is side and goes well with plain white rice,sambar sadam,rasam sadam,curd rice .tihe main ingredients are brinjal and drumstick.
Ingredients
6 nos Brinjal (cut lengthwise)
6 nos Drumstick (boiled and the pulp extracted)
6 nos Onion medium ( chopped finely)
3 nos Tomato (big) chopped
1 no Garlic (chopped)
cup Coconut (grated)
3 tsp Red chili powder
3 tsp Coriander /dhania powder
Oil ( as per need)
Curry leaves ( little) (chopped)
1 tsp Mustard seed (for tempering)
1 tsp Urad dal

Instructions

Place a kadai on the stove and add 5 t able spoon oil and when it is hot add mustard andurad dhal and let it splutter.Then add the sliced onion,sliced tomatoes and garlic and saute for 5 mts.Then add the cut brinjal and saute for 5 mts;add turmeric powder,chillypowder,dhania powder and mix well ;then add enough salt and just 1 cup of water and cook covered in slow fire till it is half cooked;then add the boiled drumsticks and cook in slow fire till the vegetables are cooked and to a fried consistency;add the coconut and curry leaves and serve with hot riceandsambar or rasam.

Notes

if you want in agravy form,you can  grind   the coconut with1 teaspoon sombu and 1 teaspoon khus khus    and add the to  vegetables when adding water to cook,this goes well with plain rice
