What is an Instant Pot ? – Its a programmable counter-top electric pressure cooker…. You must have heard or read about this magic machine in the past few months… people rave about. I was so skeptical in using one as i am pretty old school and totally love my traditional pressure cooker.

 There are many models and capacity to choose from, i got 3 quart Instant Pot Duo Mini as a gift this christmas and will be trying my hand on taming it to make Indian recipes.  Its basically an electric pressure cooker where you don’t have to babysit, count whistle or time everything is done with a touch of a button.

Instant Pot Vegetable Brinji Rice

Vegetable Brinji Rice is a variety rice made with assorted vegetables using an Instant pot.

Ingredients

Ingredients for saute

  • 2 each Brinji leaves
  • 1/2 teaspoon Fennel seeds
  • 1 teaspoon Cumin seeds
  • 1/2 cup Onion chopped
  • 4 each Green chilli slit open
  • 1 cup Assorted veggies of choice(carrot, beans, peas, potato)
  • 6 leaves Mint leaves
  • 3 cloves Garlic optional
  • 2 inch Ginger optional
  • 1 teaspoon Garam Masala coarse ground
  • 2 teaspoon Salt
  • 3 tablespoon Oil

Ingredients to cook rice

  • 2 cups Seeraga Samba Rice soaked for 45 minutes
  • 1 cup Coconut Milk
  • 2.5 cup Water

Ingredients – optional for garnish

  • 2 teaspoon Ghee
  • 20 cubes Bread slice
  • 1/4 cup Spring onion or Coriander leaves
  • 1/4 cup Capsicum
  • 6 each Cashews
  • 2 teaspoon Ghee additional for mixing

Instructions

  • Soak Samba rice for 45 minutes.
  • Under SAUTE MODE heat oil and season with brinji leaves, cumin and fennel seeds.
  • Add in chopped onion, green chilli, garlic, ginger, mint leaves and assorted veggies. Saute until the onion turns transparent.
  • Add in garam masala powder and salt. Saute for few minutes.
  • Add in soaked rice, coconut milk and water to it.
  • Cancel SAUTE MODE. Put the lid on and seal the pressure valve.
  • Switch to manual PRESSURE COOK MODE
  • Cook over HIGH PRESSURE for 5 minutes.
  • Let the pressure release naturally.
  • In a separate pan, heat ghee toast cashews and bread until golden. Lightly saute the capsicum.
  • Add this to the cooked rice along with spring onions or coriander leaves.
  • Add in little extra ghee and gently mix.
  • Vegetable Brinji is all ready to be served.

Soak Samba rice for 45 minutes. (If using basmati rice, soak for 20 to 30 minutes, still the texture varies with the brand )

Under SAUTE MODE heat oil and season with brinji leaves, cumin and fennel seeds. Add in chopped onion, green chilli, garlic, ginger, mint leaves and assorted veggies. Saute until the onion turns transparent. ( i ran out of fresh mint, hence have used dry mint leaves)

Add in garam masala powder and salt. Saute for few minutes.

Add in soaked rice to the sauteed veggies and mix.

Add the given measure of water.

Add in coconut milk.

This is how it looks when its ready to cook. Now cancel SAUTE MODE.

Put the lid on and seal the pressure valve.

Switch to manual PRESSURE COOK MODE Cook over HIGH PRESSURE for 5 minutes. Let the pressure release naturally.

In a separate pan, heat ghee toast cashews and bread until golden.

Lightly saute the capsicum. Pressure cooking capsicum may make it lifeless hence saute and add it later.

Once the pressure release naturally… the rice will be cooked perfectly.

Add ghee.

Add toasted bread, nuts, capsicum and fresh spring onions. (you may add coriander leaves in the place of spring onions)

Gently mix and immediately transfer it to a tray or bowl to avoid further cooking. Rice cooked this way doesnt stick to the bottom of the pan.
