Toasted Sub Sandwich
A simple oven toasted sub / hero / hoagie sandwich using chicken, cheese and veggies!

Ingredients
Sandwich Assembly
- 1 12" Soft Bread Loaf Italian White / Wheat or Multigrain
- 1 cup Mixed Veggies of Choice Onion, Bell peppers, Mushroom, Banana peppers, Jalapeno
- 1/2 cup Lettuce Shredded
- 1 tbsp Cilantro chopped
- 2 tbsp Oil / Butter for brushing
- 8 slice Cheese sharp cheddar / provolone
- 8 each Fresh Mozzarella optional
- 1 tsp Spice Blend (seasoning mix) Italian / Asian / Zaatar / Cajun
Spicy Mayo
- 4 tbsp Mayonnaise
- 1 tbsp Hot sauce chilli sauce / sriracha / any variety hot sauce
Baked Chicken Tender
- 3 tenders Boneless Chicken Tenders roughly 1/4 kg
- 1 tbsp Oil
- 1/4 tsp Turmeric powder
- 1 tsp Red chili powder
- 1/2 tsp Coriander powder
- 1/2 tsp Black pepper powder
- 1/4 tsp Garam Masala powder
- 1 tsp Plain yogurt
- 1 tsp Lemon juice
- 1/2 tsp Salt
Instructions
Oven Baked Chicken Tenders / Grilled / Pan Seared
- Mix chicken tenders with oil, turmeric powder, red chili powder, coriander powder, garam masala powder, salt, yogurt and lemon juice.
- Mix well to coat and set it aside for at least 15 minutes.
- Oven Bake – Pre heat oven to 400 F and bake chicken for 20 – 25 minutes turning once. (If using Paneer, just bake for a total of 6 minutes turning once)
- Pan Sear / Grill – Add a teaspoon of oil and cook chicken over a pan / griddle for 6 to 8 minutes until well done.
- Let cool a bit and then shred or slice into thin strips.
Sandwich Assembly
- Cut 12" loaf horizontally and into 4 subs
- Bruch with oil or butter. Brushing with garlic flavored butter or herb butter can enhace the flavors.
- Spread the spicy mayo and then start layering with the cheese slices.
- Top it with veggies, chicken and fresh mozzarella.
- Sprinkle some seasoning mix for additional flavor. You may pick any spice blend of choice. (Italian Blend / Asian / Zaatar / Cajun blend works )
- Drizzle few drops of oil on top before grilling or baking.
- Oven Toasted – Preheat oven to 400F. Place prepared sandwichon a oven proof tray and bake for 6 to 8 minutes or until the cheese melts. Broil for 2 to 3 minutes if you wish brown and crisp up the top.
- Microwave – This method will keep the bread soft, microwave on high for 1 minute which will only melt the cheese.
- Griddle / Grill Method – Brush some oil on a hot griddle pan or grill and place the prepared sandwich. Cook over medium flame / hot grill for 5 minutes to melt the cheese. This method will crisp up the base of the bread.
- Finally top it with shredded lettuce and cilantro and enjoy! ( Adding lettuce and cilantro while toasting will make them wilt and turn brown, so always add just before serving)
