Indian Style Red Chicken Curry

Indian Style Red Chicken Curry – quick instant pot version of spicy chicken curry made with red chilli paste.

Ingredients

  • 1 kg chicken (boneless or whole cut )
  • 2 cups onion
  • 1 cup tomato
  • 1.5 teaspoon ginger garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon red chilli paste store bought or homemade
  • 2 teaspoon salt
  • 3 tablespoon oil
  • 1 cup water
  • 1 cup coconut milk (thin consistency
  • 2 teaspoon coriander leaves for garnish
  • a few each curry leaves

Instructions

  • Heat up the instant pot starting with SAUTE MODE
  • Season with cumin seeds and fennel seeds. Saute onion, ginger garlic paste, tomatoes for 10 minutes until well browned.
  • Add chicken along with turmeric powder and salt. Saute for few minutes.
  • Add in red chilli paste and mix it along and fry for few minutes.
  • Add in water and coconut milk to the chicken mix. CANCEL SAUTE MODE
  • Put the lid on, seal the pressure valve.
  • Manually select PRESSURE COOK MODE and set at HIGH PRESSURE for 15 minutes.
  • When done, let the pressure release naturally.
  • Gently mix and garnish with coriander leaves & curry leaves.

What is an Instant Pot ? – Its a programmable counter-top electric pressure cooker…. You must have heard or read about this magic machine in the past few months… people rave about. I was so skeptical in using one as i am pretty old school and totally love my traditional pressure cooker. 

INSTANT POT INDIAN RECIPES

 There are many models and capacity to choose from, i got 3 quart Instant Pot Duo Mini as a gift this christmas and will be trying my hand on taming it to make Indian recipes.  Its basically an electric pressure cooker where you don’t have to babysit, count whistle or time everything is done with a touch of a button.

Heat up the instant pot starting with SAUTE MODE

Season with cumin seeds and fennel seeds. Saute onion, ginger garlic paste, tomatoes for 10 minutes until well browned.

Add chicken along with turmeric powder and salt. Saute for few minutes.

Add in red chilli paste and mix it along and fry for few minutes. Store bought works too, very handy and i kind of like this Aachi brand red chilli paste which is very hot & spicy. You can may make your own version of red chilli paste depending how spicy you prefer. Make it mild using kashmir chillies. Here is a version of homemade red chilli paste.

Saute everything until well combined.

Add water.

Add coconut milk to the chicken mix. (depending how rich you prefer adjust the thickness of coconut milk. I am using thin coconut milk, use thick coconut milk for a creamy finish. Alternately you may also use thick yogurt for variation skipping coconut milk)

CANCEL SAUTE MODE

Put the lid on, seal the pressure valve.Manually select PRESSURE COOK MODE and set at HIGH PRESSURE for 15 minutes. (I do often get this question does the chicken go too soft when pressure cooked for 15 to 30 minutes? Whole cut chicken with bones takes longer to cook hence 15 minutes high pressure will cook them tender… but if you stir often the chicken might slip off the bone, go gently mix when done. Adjust time depending on the size/ cut of chicken used)

When done, let the pressure release naturally.

Gently mix and garnish with coriander leaves & curry leaves.

You may try the same with regular pressure cooker.

      Tara, it’s more like an electric pressure cooker, it suits for most recipes which falls for pressure cooking. Every instant pot recipe of mine will have both pros and cons..just go over! Iam still learning… I would recommend if you do lot of stews, soups, cooking dal, meat or veg gravies…cooking rice is very tricky. It depends what you use it for…. Thanks!

      You can simple soak few dry red chillies in hot water and grind it to a paste. If you wish to store longer then… follow this link to make it
