Description
Simple green beans dry fry. (Poriyal, Thoran or Vepudu)

1 cup | Green beans |
1 no | Onion (diced) |
2 nos | Garlic (crushed) |
¼ tsp | Mustard |
¼ tsp | Cumin seeds |
¼ tsp | Split black gram |
¼ tsp | Asafoetida powder |
2 nos | Dry red chilli |
5 nos | Curry leaves |
1 pinch | Turmeric powder |
1/4 tsp | Red Chilli powder |
2 tbsp | Dry coconut flakes/ fresh grated coconut |
½ tsp | Salt (or to taste) |
3 stks | Corrainder leaves (chopped for garnishing) |
Instructions
Heat oil in a kadai or wide frying pan and splutter mustard cumin seeds, dry red chilli, curry leaves and asafoetida. Saute chopped onions and garlic until golden and add chopped green beans. Fry them with little turmeric, red chili powder and salt till they turn tender. Now add fresh grated coconut or dessicated dry coconut flakes , toss in a couple of times and finish it by garnishing with coriander leaves.
Notes
While tempering you can either use dry red chillies or use crushed red pepper flakes to make spicy. Above recipe is made with crushed dry red pepper.
