Description
Tasty ,tangy and slightly spicy curry made out of tamarind juice and omlette. Hope u will enjoy this recipe.
Ingredients-1 | |

½ | Onion[finely chopped] |
1 T | Mustard, fenugreek and cumin seeds |
pinch | Hing |
6 clove | Garlic (chopped) |
Oil as per need | |
Curry leaves and corriander leaves( for garnishing) |
Ingredients-2 | |

Half onion,one whole tomato and a piece of fresh cocnut[coconut is optional]chopped for grinding |
Ingredients-3 | |

1 | Big sized onion[finely chopped] |
pinch | Turmeric powder |
½ tsp | Pepper powder |
Salt (as per taste) | |
3 | Eggs |
Ingredients-4 | |

4 T | Thick tamarind paste |
1 T | Chilly powder (as per individual’s preference) |
1 T | Corriander powder |
Salt as per taste |
Instructions
1.Take 4 whole tablespoons of tamarind paste[adjust as per preference] and dilute it with water and add chilly powder, corriander powder,salt and turmeric powder to it and keep it aside.
2.Now grind all the content of Ingredient no:2 and mix it with the tamarind juice.
3.Take a bowl, add pepper powder, salt and turmeric powder and add finely chopped onions to it now add 3 eggs and beat well and make omlettes[u can make flat like regular omlettes if u dont have the pan that i have used to make omlette]
4.Take a kadai add oil and then add all the contents of Ingredient no:1 one by one staring with mustard ,cuminseeds,fenugreek,after mustard splutters, add asafoetida,onion, garlic and curry leaves and saute well till onion turns translucent.
5.Now pour the readily available tamarind juice to the kadai and bring it to boil.Once when u see the oil seperating from the curry, add the omlettes and switch of the stove.
Garnish it with corriander leaves and serve hot with white rice and any poriyal or kootu.
Notes
1.Please adjust tamarind and chilly powder according to ur taste.
2.Adding coconut is optional, just incase if u feel the curry is spicy, u can add coconut milk at the end before adding the omlette.
3.I have made omlette in Kuzhipaniyara chatti just for a change, u can make it flat too.

Half way through making this, I suddenly realized I had no egg. I just diced a potato, carrot and beans, cooked it in the microwave, and added it to the curry (before adding the tamarind mixture) and it came out ok too. Even if you are adding egg, I'd suggest adding the vegetables too. My only complain is that it's too watery – like rasam. Perhaps a little more coconut milk might strengthen its consistency ….
