Deepavali festival is never complete without sweets. Kaju Katli is one the most easiest and delicious fudge that you can make in just few minutes!
What is Kaju Katli?
Fudge made with powdered cashew nuts, sugar and ghee. Kaju means cashew nuts and katli / katri means fudge made with sugar syrup which is also popularly referred as ” Burfi”
Store bought sweets are sometimes made with harmful additives and it would be a better to make these easy sweets at home to ensure our loved ones relish the best!
How to make Kaju Katli?
This is one of the easiest sweet you can make in under 30 minutes. Melt sugar in little water and add powdered cashews when it reaches one thread string. Cook for few minutes or until the syrup is absorbed. Knead while its still warm, roll out and cut into diamond shaped katlis!

Ingredients
- 1 cup Cashew nuts
- 1/2 cup Sugar
- 1/4 cup Water
- 1 tbsp Ghee
Instructions
- Make a fine powder with cashew nuts.
- Take a Kadai or a non stick pan . Melt sugar in water.
- Keep the flame at medium high and heat the sugar until it comes to a vigorous boil.
- Start checking for one thread string by pressing between your index and thumb finger.
- Add the powdered cashews and stir until it rolls into a soft ball.
- Add a teaspoon of ghee while stirring and turn it off once it starts to leave the sides.
- Transfer the mixture to a greased parchment paper and knead while its still warm by placing another sheet on top or use a flat spatula.
- Once it reaches a soft non sticky dough, roll it our and cut into diamond shapes.
- Let it cool completely before storing in an air-tight box.
- Enjoy! Keeps good for 2 weeks at room temperature!

Ok, any cashew works… whole or broken or halved. I am using broken cashews as they are cheaper compared to whole cashews… hi they are going get powdered anyways!
Take 1 cup of cashews in a mixer jar… little extras wont hurt you don’t have to count!
Pulse your mixer or run the pulse setting which first makes a coarse texture then run the grind to make a fine powder. Too much grinding will make the cashew sweat and release its oil and will not let the mixer run. So, just grind as much as you can and don’t force it, will still turnout good.
In a kadai.. preferably a non stick which is much convenient… start melting the sugar in water. Increase the flame to high and let it come to a rolling boil.
First few minutes the syrup will look sticky… after 5 minutes over high flame.. You will see this one string consistency when you sample a little syrup between your thumb and index finger. Don’t worry if you cannot get this step… after 5 minutes of vigorous boiling. Proceed to next step.
Add in the powdered cashew and keep stirring… to avoid any lumps. You are going to stir this for next 5 minutes over medium flame… the cashew powder will drink up all the syrup and turn little light.
Add in 2 teaspoons of ghee at this stage and keep stirring.. Try our Double Decker Burfi – Pineapple Vanilla Milk Burfi
Next 5 minutes it will start to roll up thick… kind of semi thick. It will not stick to the pan.. and wiggle easily. Switch off at this stage. Don’t panic… it will resemble like a thick adai batter.
Grease a parchment paper with ghee and pour the semi thick batter.
Again a little ghee on top.
Now you can do this step a couple of ways… it will very hot and i don’t like to touch and knead. Gather the parchment paper and knead by folding. Or
Apply ghee to a spatula… gather and knead as shown.
Eventually after a little while once its cools a bit… it will firm up like a dough! Shaabbbaaa 😀 (ok ok don’t panic… if you can’t get this in case if you have messed up the sugar syrup consistency… add a tsp of milk powder and knead and it will dance to your tunes. I am confident that you won’t mess up but for first time beginners learning session is always scary and this is to motivate them… ) Now anyone can try this with confidence!

Place another parchment on top and roll it out to 1/2 inch thickness. Try our RAVA LADDU
Thin cuts looks odd… thick cuts preferred so 1/2 inch thickness if ok.
Cut them into diamonds… Try our BOONDI LADDU 🙂
Let them dry a bit or cool completely before you store them in a box.

Notes
- Makes 20 katlis
- You may add cardamom powder if you like… i personally hate if added to kaju katli.
- Flavoring, Coloring is also all optional… rose essence or any flavor or color can be added while kneading to make different shapes like flower or veggies.
- Silver varak can be place on top. Its hard to find here, so I skipped!

Just apply little ghee and use a rolling pin to roll or use any ziplock bags / plastic sheets works!
