Spicy Chivda / Cereal Snack / Spicy Cornflakes Mixture / Multi-grain Cereal Snack / Party Mix

Dry Cornflakes Cereal | 5 cups |
Kashi Go Lean Cereal | 3 cups |
Roasted Gram Dal (Pottukadalai) | 1/2 cup |
Roasted Peanuts | 3/4 cup |
Raisins | 1/2 cup |
Cashewnuts | 1/2 cup |
Curry Leaves | 1 cup packed |
Mustard seeds | 3/4 teaspoon |
Cumin seeds | 1 teaspoon |
Tumeric powder | 1/4 teaspoon |
Red Chili powder | 2 teaspoon |
Asafoetida | 1/4 teaspoon |
Salt | 1 and 1/2 teaspoon |
Sugar | 2 pinch (optional) |
Oil | 2 tablespoon |
Ghee | 1 tablespoon |
Instruction:
I have picked regular unsweetened corn flakes cereal and Kashi go lean made with 7 whole grains which makes this mixture super healthy.
Preheat oven to 200 F , spread both the cereals in a baking pan and bake for 45 minutes stirring every 15 minutes.
Assemble fried gram dal and roasted peanuts.
If you have raw peanuts then…(1)roast them in the microwave for a total of 2 minutes, stirring after the first one minute. or (2) roast them over low medium flame in a tawa with no oil for 5 minutes.
Heat one teaspoon of ghee in a frying pan and toast the cashews first and then followed by the raisins till golden brown and keep aside. In the same pan heat remaining ghee and oil, splutter mustard, cumin seeds and curry leaves.
Add asafoetida, turmeric powder, red chili powder, salt and sugar. Switch off and give a quick stir along with other nuts and fried gram dal.
Add this to the toasted cereal and combine well. Give a big toss until everything mix well.
Let cool completely and then store in an air-tight box.
Enjoy a bowl of this crunchy, munchy guilt-free snack with a cup of chai.

Yield : About 8-9 cups approx
