A huge pack of Idli rava was sleeping in my pantry.., guess it might be the same with many of you too. I couldn't think of anything productive other than turning them to Hotel Idlis. Well, home made idlis with regular idli rice are whiter, spongy and soft. Whereas these Rava idlis…when steamed turn out to be slightly yellowish, soft but bulgy. They turn out to be like the ones which we get in restaurants. Mostly these are kind of staple in many telugu households but to us or atleast me they remind me of hotel idlis.
Kothu Cauliflower is similar to minced meat or kheema except its the veggie version. Finely minced cauliflower florets goes into a thick garam masala making it great side for idli, dosa, chapathi or even as a side for rice.

Lima Beans or Butter Beans is a good source of cholesterol lowering fiber. This factor prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. Taking them on a regular basis is good for your health. These beans are sweet and very starchy.. suits well for any gravy or saute type of dishes. Recipe shown here is my attempt to introduce this flavourful beans to my family in the form of Poriyal / saute with coconut lentil combination.
Avial is a well known Kerala side-dish for rice. And also a Kanyakumari favourite. The aroma that arises when my grandmother cooks it in a mud pot, still lingers around. It differs from the traditional recipe in just one way – she cooked it without adding curd. And so here is Tamil Nadu's version.
Brinjal Chops is just another fancy name for " Stuffed Brinjal curry /Ennai kathrikkai", this recipe has been already shared by me but this version is slightly different and its close to the one served with biryani by catering agencies. My recipe shared here is something which I learned from a Muslim bhai who caters biryani for special occasion's and its typical tamizh Muslim style. They prepare these with black sesame seeds, never add any garam masala and brinjal's don't get be stuffed, instead they are chopped lengthwise and literally float in sesame oil.

Onion Preserve / Pickle / relish / Chutney is a semi thick spicy jelly like coarse paste usually an accompaniment for south Indian tiffin items. In our family we make this thokku in big batches and store for upto 6 months. Great for picnics, instant side for any tiffin like idli dosa or puri. We even spread this on a plain bread toast and quick snack. Fresh ingredients, more oil and using dry spoon every time.. will make this preserve last for long time. Only disadvantage it takes about 1 1/2 hours approximate to make this thokku, which is worth a try for its uses.
