Simple healthy salad to cool you up, great for lucnh box, travel and parties.
In a pan pour some oil, add 2 egg's in it, with some salt, stir, and scramble the egg.when done, transfer to a plate.
In a pan, add some oil, add sliced potatoes preferably small pieces, not very thin, nor thick medium piece's would do.
Fry till its gets 3/4th cooked in the oil.
Reduce the flame . Add 2 tsp's of chilly powder, salt, and little pepper powder, stir well, until the potatoes get coated with the powders.
Don't let it turn black, make sure the colour remains red.
Dill with sateed mushroom in peppery masala. Fresh Dill is very fragrant and sweeter with little bit of fennel and ajwain flavour. Suits well for soups, pickles and some curries. Here is my attempt to combine it with Mushroom and pepper.

Fuzzy Melon is a winter squah, rather call it this way, as it has got all the qualities of a winter squash than a melon. Grown in abundance in South East Asia and quite popular in other countries too. Though the name looks unfamiliar, its quite native to our region and in simple nothing but immature Neer Poosanikai.

Roti Canai is a popular Malaysian style fried bread similar to our Kerala style Parotta. Flour, eggs, milk and loads of fat mainly ghee or margarine is used to give a flaky texture. The process is similar to our Parotta but with extra ingredients which alters the taste and texture. Another popular version from Singapore is called Roti Prata, similar ingredients and process except for the folding. Roti refers to bread in Malay.
Mixed greens sauteid with chicken and cooked in simmering coconut milk. Stew is a thin gravy thicker than soup and thiner than sauce made with combination of veggies and stock. Here is an interesting combo of Spinach, Chard and chicken simmered in mild sweet coconut milk. Best when served with flakky parottas, plain bread, parathas etc and not a bad idea to try with plain rice too.

My latest farmers market pick was eye catching fresh purple roma beans. These sweet, mild and creamy texture beans are native to Italy and taste similar to our val or mochai. They are also called by the following names, Purple Roma Beans, Cranberry Beans and Borlotti Beans. Available fresh as well as in dried form. Dry beans needs to be soaked overnight. Fresh shelled beans are used here for sambhar and would be a great choice for people who love Mocahi / Val beans.
Can be served for an evening snack.
