How about Camouflaging the beets ??? Here is an interesting one which I found this week "Golden Beets", these are born as beetroots with golden orange skin and light yellow flesh with sweet, delicate and mild flavour of beetroot and some of carrots too. After cooking they look like cabbage stir-fry… but with all the benefits of beetroot.

Edible flowers anyone?? Quite surprised to see that these were offered for a dollar a pint at my farmers market and coundn't resist buying. Once these were tossed and other well known flowers like cauliflower, broccoli and artichokes were given importance. Small white beans are always considered staple here in USA as they go in most of their food preparations. They are well suited for soups, stews, salads and chunky chili. Baked form is most relished and used as dip for variety for breads. In my home once in a week we have SSS day.. ??? Ok its Soup, Salad and Sandwich day and I always try to make it hearty to go with a light sandwich. Kale is one tough leafy vegetable with woodsy stalks and chewy leaves similar to Murungai Keerai, leaving us with few recipe options. Cooking this with lentils was considerably easy for intake with minimal effort. Tried this with Bengal gram, following traditional kootu preparation and had no problem with picky eaters. Fresh kale (green or purple) belong to the Wild cabbage / Broccoli family, rich in anti-oxidants with high nutrition content. These type of veggies usually get a red carpet welcome in my kitchen and will be honoured with lentil studded crown.
