Black Rice Idli Dosai – Black rice (Oryza Sativa) also goes by the name Forbidden rice or Purple rice (kavuni arisi in Tamil) is one healthy wholegrain. Despite of the name, which may sound scary with darker look it has nothing to do with taste or nutrition….its just like any other rice with extra nutrition packed & a beautiful purple hue! Today lets learn how to make simple idli dosa with this rice… trust me, it taste exactly like our regular idli dosa…. my son who is a big dosa fan approved this and want me to make it often. Ingredients
- Black Rice (kavuni rice) – 2 cups
- Idli rice – 2 cups
- Whole black gram – 1 cup (skin removed)
- Fenugreek seeds – 1/2 teaspoon
- Salt – 3 & 1/2 teaspoon (kallu uppu / crystal salt/ edible rock salt)
- Water – as needed for grinding

Lets see how to make this Black Rice Idli Dosai…
It just like making any other idli dosa recipe… you soak the black rice, idli rice and black gram with fenugreek seeds added – separately for atleast 8 hours.
Now first grind the whole black gram / ulundu / urad dal to a fluffy consistency with adding about 3/4 cup water roughly. Try our LITTLE MILLET IDLI DOSA / SAMAI ARISI
Then grind the idli rice and black rice together to a coarse rava like texture adding less water.
Mix both using your hands with above mentioned salt. Cover and let it sit in a warm place for 8 to 10 hours to ferment. Try our VARAGU ARISI IDLI DOSAI / KODO MILLET
It will ferment and double in quantity. Just give a gentle mix and make idli or dosa..
Gently mix… use the same batter for idli & dosai.
Steam in idli plates for 7 to 8 minutes… the idlis will be super soft and yum.
The dosa was really fun… turns very crispy and taste even better than regular rice dosa.
Notes
- Makes 3 liters of batter.
- You may use par boiled or puzhangal arisi in the place of idli rice.
- The batter stays good of 3 to 4 days in refrigerator.
- Use the same batter for idli or dosa.
