Simple and easy to make Baked eggs gourmet style.
Ingredients | |

1 no | Egg (large) |
1 slice | White bread |
1 dash | Salt |
1 dash | Black peper powder |
1 stks | Spring/green onions |
1 tsp | Cheese (shredded) |
1 tsp | Butter melted / olive oil |
Instructions
Butter up any small baking dish, a ramekin or souffle dish or muffin pan will work. Cut plain white bread about the inner size of the cup and place it in. You may also cut the edges and press the whole slice in there. (this works for muffin pans) Brush the bread with butter again.
Crack open an egg and fill the cup. (Optional step: Adding 1 tsp light cream or milk and dash of salt and pepper)
If using a ramekin, then take a baking dish and fill it with water. I've used a cake pan, you can use any pyrex baking dishes, place the ramekin, fill with water until half the ramekin is submerged. Pre-heat oven to 350F, place it in the middle rack and bake for 30 minutes.
When done, garnish with spring onions and cheese. (Other garnishes: Salsa, cubed ham, fresh cream, bacon bits, fresh herbs, chives) Let it stay for few minutes in the cup and then slightly loosen the sides and scoop out the egg. Bread will look toasted with perfectly cooked egg on top.
Sprinkle additional salt and pepper and serve hot.
Notes
If you don't have ramekins, ordinary muffin pans works fine too. My ramekin's slightly bigger and using one egg looks so tiny. Try mini muffin pans, they are just more than perfect and also saves time if you are feeding a large crowd.
Yield: 1 Adult serving.

Sugi, if using muffin pan then you need not fill tray with water. Directly bake in muffin pan, it will work out well.
Thanks so much for your reply Mullai. I made this yesterday even before I checked your reply. So I filled a big cookie sheet/tray with water and placed the muffin pan in it & it came out good. This morning I have logged into give feedback and saw your reply. Ok, next time I will try just the muffin pan alone as you have mentioned. Thanks Mullai for your quick reply.
Ok, it's now feedback time! : ) when I tried it y'day morning, it turned out as a huge hit Mullai. Both my kids loved them! They again wanted it for evening snack! So I promised that I will make it for break-fast again today!

BB, its 30 minutes. No matter how many you're making.. its still the same. Normally small muffin pan would make 6, so if you have a few friends come over then this would be a good filling dish to entertain.
