Zucchini is a low calorie veggies and I always find ways to include them often in some form. These crispy air fried zucchini are healthy and easy to make using an air fryer!
HOW TO FREEZE ZUCCHINI FRIES
You can definitely freeze these zucchini fried in advance! After the dredging, gently place on a baking sheet covered in parchment paper and freeze sticks separately. Once frozen, you can transfer them to a freezer safe container or Ziploc bags for up to six months! Air Fryer Zucchini Fries
Air Fryer Zucchini Fries are a quick and easy healthy side dish! A few basic pantry ingredients turns your fresh zucchini into delicious, crunchy fries.
Servings: 4
Ingredients
- 2 medium Zucchini
- 1 large Egg lightly beaten with a pinch of salt
- 1.5 cup Panko Bread crumbs or Plain Bread crumbs
- 2 tsp Plain Flour optional, for dusting
- 1 tbsp Parmesan cheese
- 1/2 tsp Garlic powder
- 1/2 tsp Salt
- 1 tsp Black Pepper powder
- 1/4 tsp Cayenne (or use seasoning of choice Italian / Asian / Cajun optional, for heat
- 1 tbsp Oil (cooking oil spray) for brushing or coating
Instructions
- Trim the zucchini edges and cut them in half. Then into thin sticks about 4 inches long.
- In a bowl, mix panko bread crumbs, parmesan cheese, garlic powder, black pepper, cayenne and salt.
- In another bowl gently beat eggs with a pinch of salt.
- Dust some flour over the zucchini, this step is optional will help the egg mixture adhere better to hold the breading.
- Dredge each zucchini stick in the egg mixture and then in the bread crumbs.
- Meanwhile pre heat your air fryer to 350F for few minutes. Bruch the tray with some oil.
- Place them onto the air fryer basket or tray leaving enough room between the pieces.
- Work them in batches as a large fryer can hold only a few each batch.
- Bake these @350F for the first 8 minutes turning once. These fries can be made without oil but brushing or spaying with little oil will help to yield a very crispy golden exterior.
- After the first 8 minutes, drizzle little oil or use a cooking spray to coat. Then increase temperature to 400F and bake for 2 minutes.
- Baking this will will yield the best crispy evenly golden zucchini fries.
- Serve them hot with choice of ranch or dipping sauce!

is there any replacement of egg.
You can mix little plain flour/ all purpose flour / Maida in water. Make a light batter and dip in that mixture. Thanks🙏
